Ingredients

  • 1 sheet of fresh or frozen ready-rolled puff pastry cut into 4
  • 300g asparagus trimmed and cooked in simmering water for 2 mins
  • 2 tbsp mascarpone mixed with 3 tbsp grated parmesan
  • parmesan (or vegetarian alternative) shavings to serve
  • olive oil

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Spread the mascarpone mix over the pastry tarts, leaving a 2cm border. Lay a quarter of the asparagus on top of each. Drizzle with olive oil. Bake for 20-25 minutes until crisp and golden. Sprinkle with Parmesan shavings.

I followed the recipe exactly, and I wouldn't change a thing. It was delicious - and a really versatile recipe too, easy to whip up for a simple weeknight supper, but more than impressive enough for entertaining.

An absolute winner. it's beautiful on the plate and delicious. I've added griddled prawns to it. Be careful not to overcook the pastry. It will taste a little bitter and spoils the delicate asparagus.

I made this for a starter at a family dinner and was very pleased with the dish. It was thoroughly enjoyed by all and I will certainly be making these again! simple yet satisfying .

I added a couple of slices of parma ham on each and it was delicious - it almost made my mum cry of sheer joy!

These tarts have become a firm favourite, have used garlic & herb cream cheese with the parmesan instead of mascapone - just as wonderful!

Was pretty perfect! But maybe could do with something else on top as well? Also sprinkled a bit of salt on top - was delicious!

A starter?! Rather filling for that. We had two each for dinner and if I'd had one as a starter I would certainly not have been able to eat too much else. Lovely receipe though. Very simple. Next time I would make more of the marscopone mixuture as we couldn't taste it all that much.

Have cooked this lots of times - it's a no-fail brilliantly seasonal starter that never fails to impress on flavour.

this was simple and delicious. Added a few small cherry tomatoes to the asparagus and this tasted lovely. Will definately do again.

I used ricotta as did not have mascarpone and it was delicious. I would probably add more parmesan to the cheese mix next time though. I added some yellow pepper aswell and would possibly add tomato or bacon next time too. It made a lovely starter and I would definitely make it again.

I think I used too much cream cheese (didn't have mascarpone) and the pastry went soggy underneath. Next time i'll use less and make them smaller which should make them crispier. All in all good recipe, my boyfriend loved it!
