Spring salmon with minty veg

An easy-to-prepare healthy meal which counts for two of your five-a-day

Method

  1. Boil the potatoes in a large pan for 4 mins. Tip in the peas and beans, bring back up to a boil, then carry on cooking for another 3 mins until the potatoes and beans are tender. Whizz the olive oil, lemon zest and juice and mint in a blender to make a dressing(or finely chop the mint and whisk into the oil and lemon).
  2. Put the salmon in a microwave-proof dish, season, then pour the dressing over. Cover with cling film, pierce, then microwave on High for 4-5 mins until cooked through. Drain the veg, then mix with the hot dressing and cooking juices from the fish. Serve the fish on top of the vegetables.

Using different herbs

If you don't have any mint to hand, you can use basil or dill instead. Both add a delicious, herby freshness to this dish.

    Excellent for a quick, simple tea. I added in some tenderstem broccoli and only used half the required amount of peas as I had some to use up. Will make again and perhaps have a go with the basil variation.

    For sheer speed and effortlessness this was great. For the lovely soft, flaky salmon, (in a microwave no less!) it was terrific. For the delicious ready made sauce you end up with for the vegetables - it was perfect! This is a complete winner of a dish - speedy, healthy, easy and really tasty. It's going in my binder!

    We really liked it. I hate the microwave and I was dubious. It did begin to explode before it was cooked but I turned the power down and it was fine.

    Excellent. Just be careful not to overcook the salmon in the microwave. The sauce would also be tasty with other strong fish, or even chicken for a change.

    definatley reserve some of the mint sauce for after cooking, as the microwave somewhat destroys it.....otherwise a scrummy healthy dish :)

    This is really yummy. I couldn't believe so few ingredients could make something so delicious! I baked the salmon in a foil parcel for 10 mins and added tenderstem broccoli to the veg. It was the nicest and freshest salmon meal I've had in ages. I will definitely make it again.
