  1. Mix the oil with vinegar, mustard and garlic. Score the meat on both sides, season, then put into a dish. Pour over the balsamic mixture and leave to marinate for 5 mins.

  2. Heat a griddle pan until very hot. Lift the pork from the marinade, scraping off any garlic, then cook for 4 mins on each side. Remove the meat and keep warm. Pour the marinade into the pan with the olives, cook for 2 mins, then stir in the basil. Pour any juices from the pork into the pan, drizzle the sauce over the pork and serve with pasta.

Delicious...used pork fillet (cooked for 3-4 mins each side, med-high, the put pan in oven 180 degrees for 15 mins, then rested for 3-5 mins). Whilst meat resting, I added marinade back into pan with a little double cream and served with champ and greens. I'll definitely make again.

This was really disappointing. Maybe it was down to the pork I used but I found this tasteless and it really caught on the BBQ.

Very juicy piece of meat uhm we'll definitely make it again. Uh the only problem is that four minutes per side is definitely too much if your pan is truly very hot. I'd go for just 3 minutes per side in the future. We omitted the basil but it wasn't really a problem, very tasty indeed.

Amazing flavours and well worth cooking. I served it with garlic and rosemary roasted potatoes instead of the pasta with gridled courgettes.

Really tasty midweek family meal - I served it with olive oil mash & garlicky green beans and all 5 plates were cleared. Will definitely be a family favourite from now on.

Gorgeous recipe, I have made this several times now. My family and my Mother and Father in law love it. I occasionally miss out the basil and olives and it's still lovely. A winner in our house!

This is a really tasty quick recipe. We don't have a griddle pan so cooked it in a non stick frying pan, however this did not detract from the taste as all the sauce stuck to the steaks. I would certainly cook this again and it was easy enough for my "can't cook/won't cook" husband to have a go on his own.

Really good midweek meal. Always trying to think of different ways to cook pork and this is great. Tasty and simple.

Please could you tell us how long you cooked it in the oven for, and at what temperature. I hate my kitchen getting all smoky as I don't have an extractor hood above my oven : )

This worked well for me. See what a few people have meant about the smoke though. Mine set the smoke alarm off!

Really nice flavour and my wife has insisted that I make it again. It does get very very smokey in the kitchen so make sure the window's open. Also, I'll turn the heat down a little to med/high next time as the first side became a little charred. The '2 minute resting' is essential to make sure the meat stays moist

Not blown away by this really. There wasnt any sauce which was a big let down. The olives were the best bit.
