Chocolate soufflé

A light chocolatey treat - serve it up in coffee cups for a change

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Butter and sugar 2 small ovenproof tea cups. Stir the cream and egg yolks into the warm chocolate. Whisk the egg whites until stiff. Stir in half and fold in the rest. Pour into the cups and bake for 10-12 minutes or until risen and cooked. Dust with cocoa.

    This is quite a simple foolproof recipe as souffle recipes go. It would be great for a souffle vigin to try. It tasted nice but was a little dry even though I cooked it for barely ten minutes, needed a big dollop of cream.

    What does it mean "butter and sugar the cups"? Does it mean butter it like you would to grease a tin but with sugar mixed in as well? Thanks x

    Well in the end I just buttered them, and it didn't stick too much! Was quite nice, but a little dry, with a bit of leftover double cream poured in they were fab! Probably could have cooked them for less time, but it was my first attempt at soufflé so quite pleased overall! Could have been a bit more chocolatey maybe.

    Such a great recipe for a first-soufflé-timer!! Did this last night for Valentine's day and my husband was really impressed! I used dark chocolate and it was a little bitter so next time would use half milk and half dark and try putting some tiny flecks of raspberry in. I cooked for 10minutes and think 30 seconds less would have been perfect!

    I think butter and sugar means you butter them as in grease them with butter then cover with sugar (sprinkle in, slosh it round then tip it out to coat sides where buttered).

    Worked very well for Valentine's day - after a few tweaks: 1) Take the chocolate off the heat a few minutes before mixing in the other ingredients (I know it says warm, not hot chocolate) 2) Mix the egg yolks into the cream first, this avoids a gritty texture forming if you add the yolks direct to the chocolate 3) Whisk (not stir) the first half of the egg whites into the mixture, then fold the rest in. Makes the mixture lighter and easier to fold. 4) 200C no fan (The fan dried mine out too much) and a shade under 10 minutes seemed to work perfectly 5) Serve with a quenelle of vanilla ice cream and some blueberries & raspberries - if you want ;)

    Be careful not to overcook these as they will become very dense and dry. Also I would suggest using large eggs as my mixture barely filled half of the ramekin.
