Warm salad of eggs & bacon with tomato dressing
Make the most of humble boiled eggs by adding it to a fresh summer salad

- Whisk together the tomato, garlic, vinegar and olive oil. Season. Toss the salad leaves with the peppers and bacon. Pour the dressing over, mix well and arrange on plates topped with the eggs.

- 1 clove garlic , crushed
- 1 tbsp balsamic vinegar
- 2 big handfuls salad leaves
- 4 sliced Piquillo or Pepperdillo peppers , from a jar
- 8 slices streaky bacon , grilled until crisp, then crumbled
- extra-virgin olive oil
- 3 eggs , soft boiled from cold for 7 minutes and halved
