Warm salad of eggs & bacon with tomato dressing

Make the most of humble boiled eggs by adding it to a fresh summer salad

Method

  1. Whisk together the tomato, garlic, vinegar and olive oil. Season. Toss the salad leaves with the peppers and bacon. Pour the dressing over, mix well and arrange on plates topped with the eggs.

    This is a great dish to serve in a very large bowl so everyone can help themselves. A wonderful sunny day lunch on the patio.
