Leek, bacon & potato soup

This soup keeps well in the fridge and is easy to freeze

Method

  1. Melt the butter in a large pan, then fry the bacon and onion, stirring until they start to turn golden. Tip in the leeks and potatoes, stir well, then cover and turn down the heat. Cook gently for 5 mins, shaking the pan every now and then to make sure that the mixture doesn't catch.
  2. Pour in the stock, season well and bring to the boil. Cover and simmer for 20 mins until the vegetables are soft. Leave to cool for a few mins, then blend in a food processor in batches until smooth. Return to the pan, pour in the cream and stir well. Taste and season if necessary. Serve scattered with tasty crisp bacon and eat with toasted or warm crusty bread on the side.

This soup will keep in the fridge for a couple of days, but if you want to freeze it, don't add the cream until you reheat it.

Bacon know-how

For really crisp bacon, grill on medium-high until browned, then turn the bacon over with tongs and cook on the other side for about a minute more. Drain on kitchen paper, then crumble to serve.

    This was a lovely, tasty soup, very easy to prepare and enjoyed by my whole family. Don't miss out adding the bacon to the soup at the end as it's such a flavorsome addition to the soup.

    spot on, easy to make. i dont bother with the cream. its nice enough on its own. i use smoked bacon instead of streaky v tasty!

    Delicious I did it without the cream and was lovely. Have made extra to freeze for lunches and there is no way you can iss the crispy bacon out!!

    I just made this delicious soup for a couple of pensioners who have specific dietry requirements. I left out the cream, some of the frying butter and didn't use the bacon sprinkles - and it was still a lovely, hearty soup which i'm sure will be recieved with lots of ummmmm's and ahhhhhhh's!! Thank you!!

    Only soup I have ever tasted that beats this is my mum's lentil! Used leeks of the allotment and will definitely be making this again, a big hit with hubby and me and several other plotters who joined us for lunch.

    Instant hit! Soup is a meal in itself. Used smoked bacon lardons with the onions instead of streaky. Served with homemade wheaten bread. Perfect!

  • 400g pack trimmed leeks , sliced and well washed
  • 3 medium potatoes , peeled and diced
  • 1.4l hot vegetable stock
  • 142ml pot single cream
