Leek, bacon & potato soup

This soup keeps well in the fridge and is easy to freeze

Method

  1. Melt the butter in a large pan, then fry the bacon and onion, stirring until they start to turn golden. Tip in the leeks and potatoes, stir well, then cover and turn down the heat. Cook gently for 5 mins, shaking the pan every now and then to make sure that the mixture doesn't catch.
  2. Pour in the stock, season well and bring to the boil. Cover and simmer for 20 mins until the vegetables are soft. Leave to cool for a few mins, then blend in a food processor in batches until smooth. Return to the pan, pour in the cream and stir well. Taste and season if necessary. Serve scattered with tasty crisp bacon and eat with toasted or warm crusty bread on the side.

This soup will keep in the fridge for a couple of days, but if you want to freeze it, don't add the cream until you reheat it.

Bacon know-how

For really crisp bacon, grill on medium-high until browned, then turn the bacon over with tongs and cook on the other side for about a minute more. Drain on kitchen paper, then crumble to serve.

    Yum yum yum, this was lovely! Took a chance as we had friends coming for lunch and I hadn't made this before, but it went down well with everyone including the 3 year old and 1 year old! Great recipe.

    When a recipe mentions streaky bacon, I don't know if it is smoked or unsmoked bacon. The taste is really different and could be important for different recipes. Which is used in this recipe?

    I started it all off in the pan as in the recipe, then popped it in the slow cooker for a few hours. Didn't use the full amount of single cream, but it's delicious and keeps well in the fridge for a couple of days for packed lunches to heat up at work. Definitely one I will cook again.

    This was delicious. I omitted the cream but I don't think it needed it and I cut down a little on the stock. Garnished with crushed garlic croutons as I had run out of bacon.

    Very yummy soup! I used smoked back bacon, cut into small pieces and fried my bacon and onion in 1tbsp olive oil instead of butter. I also used 1L of chicken stock and added about 200ml semi-skimmed milk instead of the cream, I like my soup quite thick. Even my son enjoyed it!

    Mmm just made this for my boyfriend and myself, he is suffering with a cold but I think it did the trick. Really tasty and lovely. I put a few onion crispies on top as I didn't have enough bacon - it worked!

    I made this soup last night. It was very easy to make and tastes fantastic! I served it with crusty bread rolls and my husband also loved it. The bacon adds a great twist to leek and potato soup. I will definitely make this again!

    Great! :) I really enjoyed it. Go easy on the salt though as the bacon and the vegetable/chicken cubes are already salty and you could end up over doing.

    A bit salty, but overall very good! Will definitely make this again. Only one thing was off- the soup was just a tad watery, so I would say add an extra potato, or a little less stock.
