  • 250g butter, softened
  • 140g caster sugar
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 300g plain flour

Method

Mix 250g softened butter and 140g caster sugar in a large bowl with a wooden spoon, then add 1 egg yolk and 2 tsp vanilla extract and briefly beat to combine. Sift over 300g plain flour and stir until the mixture is well combined – you might need to get your hands in at the end to give everything a really good mix and press the dough together.

These are sooo yummy and easy to make!
Popular variations include ginger (adding 2 balls chopped stem ginger and 1 tbsp ginger syrup) and coffee and walnut (2 tsp coffee and 100 roughly chopped walnuts!) Yum

i made the chocolate ones and i was worried that they didn't seem to be cooked after 16 minutes but once cooled they were actually perfect, moist and gorgeous as the chocolate chips had melted :) i had a disaster with the lemon ones tho as i tried to use 'candarel' instead of sugar, they ended up savory and nice with cheese, but i will make again with proper sugar :)

i love this recipe - its great as a quicky to keep the kids happy. does anyone have any other variations on it, id love the peanut butter recipe if anyone has it?

Divine vanilla, buttery biscuit dough able to be transformed into many cookies. My fave is to use basic receipe and then flatten them slighty before putting a thumb print and 1/2 tsp jam. Made 24 cookies.

MMM! I used oats, mixed spice and raisins in one batch, and a tsp peanut butter and handful of peanuts in the other! They were lushhhh!

I have made the penut butter ones on 5 different occasions and everybody loved them. I have also made the chocolate ones and the plain ones which were just as good. Trouble is one is never enough especially just out of the oven!
A favourite to use again and again!

great recipe, everyone loves it when i bake these cookies.
i add cocoa powder and lots of mixed peel to make chocolate and orange cookies.

I think there was too much butter, not sweet enough and could have done with bicarbonate of soda.
I'm not following this one again

Great recipe, biscuits turned out really buttery and held together well. I used the basic recipe and subbed some of the flour with ground almonds.

Really easy to make. We made just the basic mixture and used a Christmas tree cutter, them decorated them with melted chocolate.

I made these with chopped glace cherries and white chocolate chips, they were absolutely delicious, this is now my number one cookie recipe!!!

Really easy to make with very yummy results! I made the chocolate version and this is definately a winner although I will try the other flavours too!

A friend of mine has made these for work, he left out the vanilla extract but they were really nice i couldnt taste the difference. I am later today going to make the chocolate biscuits.

These are FANTASTIC!!! last time i made them I made more dough than i needed and put the rest in the freezer in a rollingpin shaped lump. Then, the next time I needed some biscuits I took it out of the freezer and cut it into biscuits (already round) and shoved on a tray and put in the over - AMAZING biscuits in about 12 mins flat!!! it was great!! Everyone LOVED the lemon ones (although I did mine without the icing)

I made the chocolate American cookies they were yummy, very easy to make
