Salmon, broccoli & potato bake

A classic combination of flavours for a midweek family meal - make this recipe in just one pot

Method

  1. Put the potato wedges into a shallow microwave-proof baking dish, then cook on High for 10 mins until almost tender all the way through (turn the wedges halfway through to ensure even cooking). Add the broccoli, re-cover and cook for another 3 mins or until the florets just give with a knife. If you don't have a microwave, boil instead.
  2. Heat grill to medium. Mix the crème fraîche and mustard together with a little seasoning. Nestle the salmon in among the potatoes and broccoli, then spoon over the crème fraîche mix, making sure most of the broccoli is covered with sauce. Sprinkle with the cheese and grill for 5 mins until the sauce is bubbling, the tips of the potatoes are golden and the salmon is just cooked.

Buying salmon fillets

Salmon sold in packs normally has the skin still on. Buy it from the fish counter instead, and ask them to remove the skin, saving you the hassle when you get home. Make sure it is from a sustainable source.

    Oh how simple this dish is yet so tasty and looks great. My husband pulled his face when I told him what was for his evening meal but once he'd finished it asked when was I doing it again. I think this is going to be a regular dish.

    I've made this recipe several times now, and every time my husband says how delicious it is! I always halve the recipe as I only need anough for two, and use much less mustard (about 1 slightly heaped teaspoon) and the full 200ml creme fraiche. I wonder if creme fraiche in the UK is different to what we can buy here, as the "sauce" is actually a bit too thick, so I also leave a small amount of the cooking water in the dish. It's the only way my husband (almost) likes broccoli!

    Wasn't much of a fan of this. Used dijon mustard hoping it would be less strong, but I still found it overpowered the dish. If there was something you could subtitute for the mustard I'm sure it would be a lovely dish!

    Lovely family meal, although i cooked the wedges in the oven with oil and salmon under the grill and boiled the broccoli and put all together at the end. Delicious.

    Great recipe, quick and easy and everyone loved it - also worked well when blended down for my 9 month old - thought the mustard might put her off but she loved it!

    We loved this recipe, I served it with a huge salad. The only thing I changed is that I used bought bechamel sauce, which I lightened with a little milk, as I didn't have creme friache. A different and tasty way to cook salmon which we eat quite often.

    Beautiful food, my boyfriend said it was one of his favourites. However! The suggested time is completely off. Ready in 15 mins it says, with 18 minutes of microwaving time and none for prep like cutting the potatoes up at the start. I parboiled the potatoes and broccoli, tipped them into a casserole dish, added the salmon, 200 ml creme fraiche mixed with 1 tblsp dijon mustard and a generous sprinkling of shaved parmesan. Tried to cook it under the grill but the salmon was still raw, so I put it in the oven for 10 mins. Perfection. Will do again.

    Love this! Made it last night, boiled the pots and brocolli instead of microwaving. So quick and very tasty - added sweetcorn in to mine as had some left to use. Would be nice with 1 extra veg I think!

    Having read through other comments I used 300ml half fat creme fraiche and 2 tbsp dijon mustard which gave a lovely flavour but not too intense. I also added sweet corn and baked it in the oven for ten minutes, finishing under the grill for five minutes. My husband went back for seconds!

    Have made this a number of times now as my hubby who is not the biggest fish fan loves it. It is also quick and so easy, perfect when I don't have much time. I also sometimes add a few capers.

    Sounds good and I will try it for lunch today. However, although arithmetic isn't my best subject, I can't see how 10 mins for the potatoes, plus 3 for the broccoli, plus 5 for grilling can add up to 10 mins cooking time!
