Method

  1. Bring the stock to the boil with the tomatoes, then add the spaghetti and cook for 6 mins or until done. A few minutes before the pasta is ready, add the vegetables and bring back to the boil. Simmer for 2 mins until everything is cooked.
  2. Serve in bowls drizzled with pesto and oil, sprinkled with parmesan.

Breaking spaghetti

The easiest way to break the spaghetti is to wrap it in a clean tea towel and, holding it with both hands, bash it against the side of a table to break it into small pieces.

    I've literally just made this for lunch and I was a bit worried it was going to be a bit bland but it SO wasn't! It was delicious and much better than any shop bought soup. So good, I want some more!

    Very easy to make and very tasty and filling. I also used small pasta shapes instead of spaghetti which worked well, I added some garlic and a small chilli too. The pesto added a lovely flavour. Served with crusty bread with melted cheese which worked well with the soup's flavours. Will definitely make this again.

    So easy and quick to make. Didn't have pesto or parmesan cheese. Added chopped up frankfurters/hotdogs and my son topped his soup with few thin slices of cheddar cheese instead. Enough left over for tomorrow's lunch. Great! Will get some pesto next time :)

    I have this soup twice in the last week and me and my partner and 2 children love it!!!! I have found that if i boil the veg seperatley the stock doesn't reduce as much..... really tasty and filling though. Is now a favourite of mine, and a great way to get a 3 and 1 yr old to eat veg!!!!

    I used the remainder of a carton of V8 vegetable juice and made up the volume with stock, had several packs of different frozen vegetables which needed to be used up so they went in too plus half an onion from yesterday along with some garlic and black pepper - it was delicious but I will never be able to replicate it as I may never have the same left-over ingredients again!

    I really liked this recipe. It was so easy. I didnt have any pesto or frozen veg, instead I added peppers onions, garlic and frozen peas. Handful of pasta to keep the calories down. Very good recipe, only negative is it is slightly watery. Next time, i will reduce the amount of stock.

    This was delicious & so simple, i added half an onion and a clove of crushed garlic along with finely chopped carrots & chopped string beans, i will be bringing this to work for lunch in the future

  • 100g thin spaghetti , broken into short lengths
  • 350g frozen mixed vegetables
  • 4 tbsp pesto
