Quick chicken chasseur

Method

  1. Heat a shallow saucepan and sizzle the bacon for about 2 mins until starting to brown. Throw in the chicken, then fry for 3-4 mins until it has changed colour. Turn up the heat and throw in the mushrooms. Cook for a few mins, stir in the flour, then cook until a paste forms.
  2. Tip in the tomatoes, stir, then crumble in the stock cube. Bubble everything for 10 mins, splash in the Worcestershire sauce, stir through the parsley, then serve with mash or boiled rice.

    I fried garlic with the bacon, added a splash of red wine with the tomatoes and stirred in a couple of teaspoons of paprika, a sprinkle of black pepper and it tasted delicious. I also diluted the stock cube with a little hot water which helped it blend in. Will definitely cook again for a quick midweek tasty dinner.

    A nice and easy recipe, but it needs more spices. When I tasted it, all it was was salty. I added a tablespoon of chilli paste (Sambal Badjak) and fresh coriander. Next time I'll ad some onions to.

    Made this tonight, but added garlic, half a glass of white wine, chicken stock, then left it in a low oven for an hour, stirring in 2 tablespoons of cream at the end - everyone had at least 2 helpings! Very good for such a simple recipe.

    I made this as the main course for a murder mystery dinner party last night. I was worried about using the garlic flavoured tomatoes but the taste blended in with the other ingredients. It was very tasty and easy to make so I would definitely use the recipe again.

    Tasted strongly of beef stock, I understand the idea of adding beef stock to a chicken dish to make it a bit meatier but we didn't like it. It was edible but a thousand miles from a proper chasseur. Sorry :-(
