Quick beef & broccoli noodles

Method

  1. Start by making up the sauce. Mix the ingredients together in a small bowl. Boil the noodles according to pack instructions. A minute before they are ready, tip in broccoli.
  2. Meanwhile, heat the oil in a wok until very hot, then stir-fry the beef for 2-3 mins until well browned. Tip in the sauce, give it a stir, let it simmer for a moment, then turn off the heat. Drain the noodles, stir into the beef and serve straight away, scattered with spring onions.

VEG-PACKED NOODLES Add 1 large sliced carrot and a handful trimmed green beans to the water when the noodles go in. Add 2 heads quartered bok choi when you add the broccoli, then drain everything well and continue the recipe from step 2.

    I doubled the amount of veg, and used 2/3 the amount of noodles(wholewheat) makes it a bit healthier and easily still serves 4.

    How much is "3 blocks of noodles"? Tried this with fresh linguini, the noodles were fantastic. We found the sauce was a little too teriyaki-tasting, but it was generally OK.

    Lovely flavour combinations but a couple of problems - the broccoli won't cook in one minute so I think that instruction needs to be amended and the quantity of sauce per person was very small alongside it evaporating quite a lot in the pan, so the full flavour couldn't be tasted.

    really delicious and filling. i skipped the tomato sauce part as, for me, there are too many additives and sugar in it. i used mirin instead of white wine vinegar and added sesame seeds too. lovely.

    I added pak choi, and a little bit of sugar to the sauce, though it was missing ginger and white wine vinegar, was nice, and took minutes to make! The beef was delicious in that sauce!

  • 2 tbsp oyster sauce (not oyster stir-fry sauce)
  • 1 tbsp tomato ketchup
  • 2 garlic cloves , crushed
