Method

  1. Heat oven to 180C/fan 160C/gas 4. Grease and line a 20cm cake tin.
  2. Place the butter, caster sugar, brown sugar, chocolate and golden syrup in the pan and melt gently on a low heat until it is smooth and lump-free.
  3. Remove the pan from the heat.
  4. Break the eggs into the bowl and whisk with the fork until light and frothy. 5 Add the eggs, vanilla extract or essence, flour, baking powder and cocoa powder to the chocolate mixture and mix thoroughly.
  5. Put the mixture into the greased and lined cake tin and place on the middle shelf of the oven. Bake for 25-30 mins.
  6. Remove and allow to cool for 20-30 mins before cutting into wedges and serving.
  7. Serve with cream or ice cream and plenty of fresh fruit.

    The cake had a lovely moist, chewy texture. But it was waay too sweet even though I reduced the amount of sugar ... and that's saying alot as I have more than one sweet tooth. I would make it again, but reduce the amount of sugar further and add more dark chocolate. It lacked the chocolate 'kick' that 'Best-Ever Brownies' recipe has.

    Nice cake, what's with the serving suggestion, though? "Serve with cream or ice cream and plenty of fresh fruit." Who wants plenty of fresh fruit with a chocolate brownie cake - please!!! Is it supposed to offset the "naughtiness" ? LOL

    I made this cake with Stuart and Chris. We made it together with the ratatouille pasta dish. The vegetables took a bit longer to roast than we expected so we had to put the cake in the oven at the same time instead of afterwards as we had planned. They were both very enthusiastic about the results. I thought that a bit less heat and a bit more stirring when we melted the ingredients would have made for a smoother mixture. There were quite a few ingredients to buy so we probably will make it again as there won't be much to buy except chocolate next time.

    this cake is lovely, we have made 2 already this week and both eaten within 2 days of cooking, it is even better eaten warm with a scoop of vanilla ice cream on top.

    Fantastic! We made it with regular granulated sugar instead of caster type, and maple syrup instead of golden syrup, as we are in France and couldn't get those. Tasted better the next day, and even better the next (and then there wasn't any more). Will make many times more!

    Excellent! Used 2 tsp of baking powder, the edges rose higher than the centre of the cake so maybe I used too much powder but was nice and crisp on the outside and soft & gooey in the centre.

    i made the brownies tonight and i did what it said but the centre of the cake has risen lumpy and gooey but the outsides seem to be ok did is that how its supposed to be? either way it tastes nice

    I made this today. It was so easy and even though the tin I had was too big the cake was still moist on the inside and crunchy on the outside. To make it a healthy option I served it with 0% greek yoghurt!!

    Mmmmm-mmmm!!! Gorgeous and as easy as A,B,C!! So quick to make! Would be fab with some raspberries in it too! The edges went a little crunchy round the edges so if your looking for all round gooey-ness keep an eye on it, but i liked the chewy bits anyway! Would be lovely with creme fraiche, but unfortunately i only had single cream! Fab and will defo make again and again!! Go on do it!
