Chocolate brownie cake

Get kids cooking at the weekend by baking this yummy brownie cake, much better than shop bought

Method

  1. Heat oven to 180C/fan 160C/gas 4. Grease and line a 20cm cake tin.
  2. Place the butter, caster sugar, brown sugar, chocolate and golden syrup in the pan and melt gently on a low heat until it is smooth and lump-free.
  3. Remove the pan from the heat.
  4. Break the eggs into the bowl and whisk with the fork until light and frothy. 5 Add the eggs, vanilla extract or essence, flour, baking powder and cocoa powder to the chocolate mixture and mix thoroughly.
  5. Put the mixture into the greased and lined cake tin and place on the middle shelf of the oven. Bake for 25-30 mins.
  6. Remove and allow to cool for 20-30 mins before cutting into wedges and serving.
  7. Serve with cream or ice cream and plenty of fresh fruit.

    To make a very healthy version, I substituted the caster the sugar for xylitol (an organic sugar free sweetener available in health food shops), used agave syrup (a low sugar plant based sweetener) instead of golden syrup and kamut bread flour (high protein flour full of nutrients from Waitrose) instead of the specified refined white flour. It was absolutely delicious and my partner had no idea it was so healthy; he's a real foodie and likes full fat / sugar versions of everything. For me, I enjoyed knowing it was good for me as well as being delicious. I don't think you can use all xylitol as the brown sugar is what gives the brownie its stickiness, but it doesn't hurt to use a little anyway!

    Brilliant brownie - so easy and absolutely gorgeous. Made it yesterday and followed the recipe to the letter, cooked for 30 mins and left it to stand for 20. It is gooey but lovely and chewy on the outside - fantastic. The whole family couldn't get enough and the whole thing went in one sitting. This will undoubtedly become a family favourite - they're already asking me to make it again.

    Way too sweet even though I used 60% dark chocolate. Next time I will half the sugar and add walnuts.

    Love this recipe, never fails to impress. It works great as a cake with ice cream or cut into squares as brownie bites. Has anyone tried to freeze this recipe? I would really like to know if I can freeze so I can make double next time!

    Great recipe. Took no time at all to make. Made it in a 9x13inch silicon tray and it was perfect. Crispy on the outside and soft and gooey on the inside. Great as a basic recipe. I used plain Chocolate as that was what I had in. It is certainly something you only need a little bit of to satisfy any sugar cravings. Will add and adjust to make different variations in the future and use this as a base recipe. Even my husband loved them and he isn't a big brownie fan. Kids scoffed them like they were going out of style. Lovely heated up with some cornish ice cream on top.

    Made this twice- square and round and the square version was considerably drier as thinner. Really great easy cake to make though and covered the round one with melted milk chocolate and it was the dream cake for a 4 year old!
