  • ½ a 500g bag frozen forest fruit
  • 200g crunchy oat cereal
  • 50g pine nut

Method

  1. Heat grill to high. Lay the apple slices and apricots in a shallow, microwaveable baking dish, then add the jam and a splash of water. Cover with cling film and cook on High for 5 mins or until the fruit starts to soften. Stir the frozen fruits through, re-cover and cook for another 3 mins until defrosted.

  2. Mix together the cereal and pine nuts and spoon over. Grill for 2 mins until golden.

Fabulous!! I substituted ginger jam for raspberry and used frozen raspberries. I also replaced topping with simple flapjack recipe (100g butter, 100g sugar, 1tblsp syrup, 150g oats) and cooked in oven for 30 minutes (ish).

I made this without the ginger compote and also didn't bother grilling it. The filling was hot so I just topped it with the cereal and served. Quck and tasty.

This was really disappointing. I'm sure it was healthy, but filling was dull and watery and the topping is just a pile of dry breakfast cereal.

I have made this recipe so many times now and it turns out great each time. Great for a dinner party as it can be made ahead and just warmed up at the end. To keep the super healthy tag I serve with half fat creme fraiche!

I loved the combination of ginger with fruit and served it with thick dairy custard. The crumble topping is a nice variation on a theme and went down well with the family. It is very easy to make but keep an eye on it under the grill!

Really easy and the topping worked very well. Instead of jam I used mincemeat with just the apples plus a little sugar. Delicious!
