Method

  1. Heat grill to high. Lay the apple slices and apricots in a shallow, microwaveable baking dish, then add the jam and a splash of water. Cover with cling film and cook on High for 5 mins or until the fruit starts to soften. Stir the frozen fruits through, re-cover and cook for another 3 mins until defrosted.
  2. Mix together the cereal and pine nuts and spoon over. Grill for 2 mins until golden.

    I loved the combination of ginger with fruit and served it with thick dairy custard. The crumble topping is a nice variation on a theme and went down well with the family. It is very easy to make but keep an eye on it under the grill!

    I have made this recipe so many times now and it turns out great each time. Great for a dinner party as it can be made ahead and just warmed up at the end. To keep the super healthy tag I serve with half fat creme fraiche!

    This was really disappointing. I'm sure it was healthy, but filling was dull and watery and the topping is just a pile of dry breakfast cereal.

    I made this without the ginger compote and also didn't bother grilling it. The filling was hot so I just topped it with the cereal and served. Quck and tasty.

  • ½ a 500g bag frozen forest fruits
  • 200g crunchy oat cereal
  • 50g pine nuts
