- 1 red onion, cut into wedges
- 225g self-raising flour
- 2 tbsp olive oil, plus 1 tsp
- 5 tbsp fresh tomato pasta sauce
- 50g cheddar, grated

Method
- Heat oven to 220C/fan 200C/gas 7. Place the pepper, courgette and red onion on a large non-stick baking tray and drizzle with 1 tsp olive oil. Season well and toss to combine. Roast in the oven for 20 mins until soft and beginning to brown. Set aside.
- Heat the grill to medium. Season the flour well and, in a large bowl, mix with the remaining oil and 4-5 tbsp water to form a soft dough. Knead briefly, then roll out on a floured surface to a rough 20cm circle. Transfer the dough to a large ovenproof, nonstick frying pan and fry over a medium heat for 5 mins, until the underside begins to brown. Turn over and cook for a further 5 mins. Spread the tomato sauce over the base, scatter with the roasted veg, then sprinkle with cheddar. Grill the pizza for 3-4 mins until cheese has melted. Serve immediately, sliced into wedges, with a large green salad.

Tasty, though I did as some reviewers suggested and used less flour and more oil and water than the recipe suggests. Also, I oven baked the base instead of frying it to save on washing up, then added the veg and oven baked to finish. Overall not a bad recipe, but in future I'll just buy pizza dough mix and do it that way.
Split the dough into two pizzas for a thinner crust and lower calories. If its too thick it tastes too doughy for me. As for the people suggesting a quarter is not enough - it is with sides, salad or wedges. Can also be divided into four for individual pizzas - used to do that at uni for fussy eating housemates
I cannoit see the point of oven roasting the vegetables, in oil, before cooking the pizza; surely if they had been friedionavery little oil the juices, and flavour, in the pan could then be transferred to the dough base. Also a yeast dough is always better than a scone dough, even if there is not along time for proving, is easily made while the veg are cooking, and is delicious when "fried" in apan
I had absolutely no problems with my dough, except I didn't manage to roll out a circle and therefore my base was a more abstract shape! However this didn't distract from the taste. I will definitely make this again and experiment with different toppings. I thought this was nicer and tasted better than a frozen veg pizza which often tend to be bland and watery. The only criticism I have is that there were way too many vegetables and even though I didn't put them all on I still thought there were too many. But even that's not really a criticism!! I would recommend everyone try this recipe :)
Will use this again and again. Just changed the topping to what I had in the kitchen. Used some roasted tomato puree that I had in the freezer from the summer, mixed with a bit of tomato puree. Then had onions mushrooms pepperoni and cheese on top. Will try with courgettes once they are back in season. If you have any dough left you can keep in the fridge for a couple of days. Went down well with all the family.
Definitely needed loads more water and oil to get the dough to stick together, so perhaps less flour is the way forward. I had too much veg on it as well, so maybe it needs to be rolled out thinner. Also used mozarella (half fat) instead of cheddar which needs a tad more time under the grill.
Not a bad recipe for a quick pizza fix but definitely some slight modifications needed to the original recipe I think. Will keep at it!
I adapted this by using gluten free plain flour and some baking powder to replace the self raising flour. Had to add an extra couple of tablespoons of water to get to the right consistancy and also finished it off in the hot oven for 5 minutes rather than grilling it.
All told though it turned out very good (only served the two of us but it ws filling). I have saved this page to my favourites :)
The whole thing was so easy to make and after the roasted vegetables I added chopped roast chicken which I had left over, added the cheese anda sprinkling of dried oregano. It was absolutely delicious. I did have to add more water to the flour tho', but once you have made it you can make changes to suit your own taste. Definitely on my 'make again' list.
We never normally eat pizza but after finding nothing to make for dinner I found this recipe. Very easy to make, I added chives to the dough and added spring onions to topping. Absolutely delicious ! When my family visit this is what they want so I make and bake several bases and freeze them. Saves a lot of time.
