Sea bass with sizzled ginger, chilli & spring onions

Method

  1. Season the fish with salt and pepper, then slash the skin 3 times. Heat a heavy-based frying pan and add 1 tbsp oil. Once hot, fry the fish, skin-side down, for 5 mins or until the skin is very crisp and golden. The fish will be almost cooked through. Turn over, cook for another 30 secs-1 min, then transfer to a serving plate and keep warm. You'll need to fry the fish in 2 batches.
  2. Heat the remaining oil, then fry the ginger, garlic and chillies for about 2 mins until golden. Take off the heat and toss in the spring onions. Splash the fish with a little soy sauce and spoon over the contents of the pan.

Fish has a very special place in the Chinese New Year menu as it symbolises abundance. Normally it would be served with the head and tail on, bringing a good beginning and end to the New Year. Here it is filleted for simplicity, but you can easily adapt the recipe if you like.

    Simple but effective. I kept the cost down by using pollack instead of sea bass and it turned out really well; the friend I cooked it for thought it was heavenly! Had it with broccoli and oyster mushrooms stir-fried in toasted sesame oil with garlic and chilli (with a dash of Thai fish sauce if you like) and it went down really well.

    I "chicken"d out of trying this receipe with fish but used Chicken instead bashed out with a rolling pin and then fried. Nice mix of flavours and would definelty try it again, maybe I'll be more adventurous and try it with fish next time!

    Great recipe, but...WHY do people insist on calling it "Sea Bass" there aint no such thing. Its a "Bass" you wouldn't say "Sea Cod" would you??

    Great recipe, I am a huge fan of fish, but had never cooked sea bass before. I think the success of this one is not letting the flavours of the Ginger, Garlic and Spring onion overpower the fish. I added the spicy part of the dish quite sparingly and it worked really well. I presented it with saute potato and served it with a plain salad. I enjoyed every mouthful!

    This was fantastic. I am always striving for quick and tasty meals. I added some rice noodles just as I put in the spring onions along with the other ingrediants and then served the noodle mixture and placed the fish on top with a few bits of chilli and spring onion to decorate. My husband who is not a fish lover said it was amazing and was almost like 'masterchef'. We will definitely be having this again. Can't recommend it highly enough

    Was very tasty. Would do again but I used too much chilli this time so would hold back a little next time. If anyone has suggestions for giving it a milder chilli flavour I would be grateful. I'm a wimp, clearly.

    I have now converted my husband onto fish with this recipe, previously he hasn't eaten it for 30 years! I found the chilli drowned the taste of the fish and would use less next time. The fish was cooked beautifully.

    They're simple ingredients but they go together very well! I was short on ingredients when i made this but I used frozen garlic and ginger which worked just as well :)

    I've made this several times for me and my husband. He's a bit funny about fish (!) so the fact that he loved is was a God send. I've served it with stirfried veggies and rice or noodles.
