  1. Season the fish with salt and pepper, then slash the skin 3 times. Heat a heavy-based frying pan and add 1 tbsp oil. Once hot, fry the fish, skin-side down, for 5 mins or until the skin is very crisp and golden. The fish will be almost cooked through. Turn over, cook for another 30 secs-1 min, then transfer to a serving plate and keep warm. You’ll need to fry the fish in 2 batches.

  2. Heat the remaining oil, then fry the ginger, garlic and chillies for about 2 mins until golden. Take off the heat and toss in the spring onions. Splash the fish with a little soy sauce and spoon over the contents of the pan.

Delicious! Served it with plain rice and steamed sugar snap peas and probably more soy sauce than was good for me. The children liked most of it... they ate it, anyway!

Quite filling and 1/2 cup cooked rice was all I could manage. The fish tasted delicious and the crispiness was just perfect. Used Olive oil instead which may have contributed to extra heaviness...:)

Easy to make with few ingredients and clear instructions. I served with rice noodles, mangetout and baby sweetcorn. It was absolutely lovely and I will definately be making this again.

Sainsbury's had a special offer on sea bass yesterday so I got some and did a search on GF. I had all the ingredients to make the first recipe to come up - this one- so that was decided. What an easy tasty recipe! Filleting the sea bass was the hardest part (I usually buy filleted fish)!!! I served it with a stir fry rice. This will stay in my binder to make again (and again!!) Thank you GF!!

I impressed myself with this simple dish. It looked and tasted wonderful and could easily have come from a top restaurant. I just served with basmati rice that had been moulded in ramkins before tipping onto the dish. I would not change a thing.
