Speedy salmon and leek one-pot

Method

  1. Cook the leeks: Put the leeks into a large microwave dish and sprinkle over 2 tablespoons water. Cover the dish with cling film and pierce a couple of times with a fork. Cook on 850W for 3 minutes, then leave to stand for 1 minute.
  2. Make the sauce: Whisk the olive oil, mustard, honey and lemon juice together and season with a little salt and pepper. Scatter the tomatoes on top of the leeks and spoon over half the sauce.
  3. Cook the salmon: Lay the salmon fillets side by side on top of the vegetables and spoon the remaining sauce over them. Replace the cling film and continue cooking on 850W for 9 minutes. Leave to stand for a couple of minutes before serving.

    enjoyed this dish very much, cooking the salmon in the microwave keeps it lovely & moist. As I had half a cabbage and some sprouts to use up I sliced the cabbage finely and added sliced sprouts to it, which made an interesting alternative to the leeks. I will definitely make it again.

    As I live alone I halved all the ingredients. Such a quick meal and I agree cooking the salmon in the microwave keeps it lovely and moist

    Found it quite tricky to cook in the microwave so baked in oven for 25 mins. Very moist but not so keen on the actual taste.

    Very easy to make, although skipped the microwave. I layered everything in foil parcels (one per fillet) and put them in the over for 40 min. I also skipped the oil as the leeks give more than enough of the sweetness I like. I guess that omitting the cherry tomatoes would also work well.

    I don't have a micro wave so baked it in the oven, covered with foil for 1st 15 minutes then uncovered for 5-8 more minutes. Fish was lovely. I thought that the dressing was far too sweet with the leeks and the tomatoes also being sweet. I would miss the honey off next time and perhaps replace with soy sauce. It was very filling and good on its own if you are cutting down on the carbohydrates, but it would be delicious with mash!

    This is extremely good and very tasty - a real winner. I have added a few peas and some chunks of red or yellow peppers to the leeks and tomatoes before cooking and topped the salmon with a little horseradish sauce just after cooking.

    Very unassuming yet totally superb . I only half cooked the salmon then finished it??? off by roasting it all in the oven (don't let the salmon over cook though) as I like a bit of colour to my food and a microwave can't do that . I added sundried tomatoes which neither added nor subtracted from the dish. I served it with crushed buttery potatoes and sweet carrots. Delicious. 5 stars from me.
