Ingredients

  • 100g Self Raising Flour
  • 2tbsp Sugar
  • 1 beaten Egg
  • 150ml Cold Milk

Method

    1. Carefully sift the flour into a mixing bowl.
    2. Add in the sugar and mix together. Make a well in the centre of the mixture.
    3. In a jug, lightly whisk the egg and milk together.
    4. Pour the egg and milk into the well and whisk until the mixture is smooth and creamy.
    5. Lightly grease a frying pan or griddle and preheat to a medium heat.
    6. Carefully drop 3 separate tablespoons of the mixture into the pan, keeping them well apart.
    7. When golden brown, flip them over and cook the other side too.
    8. If stacked between layers of kitchen paper, this will keep them warm and moist until the all others have been cooked.
    9. Serve with a little butter, jam or golden syrup. A scoop of ice-cream can also make it more special.

Thanks for this great recipe, I tweaked it by adding a tsp of vanilla essence and fried in a small amount of butter. Perrrrfect! The only problem with the recepie was they still tasted like english pancakes and I really wanted that american cake textured pancake so I will keep looking, works well in a stainless steel pan if you do not have a non stick!
