Method

  1. Heat the oil in a pan, add the onion and cook for 10-15 mins until soft. Add the garlic for the final min, then stir in the beans to heat through. Add the lemon zest and juice. Stir in the parsley to serve.

    Super easy and very, VERY good! Made this today for lunch as a side dish for the chicken kiev. Couldn't be happier! I'm not sure I used the same beans, as the beans I bought, as a result of translating "butter beans" to portuguese, are brown and not white... Anyway, adored it, I definitly recomend you try it with the chicken kiev and I will definitly be making that combo again!

    Hardcore carnivores found it lacking in salt and (-imagine a very, very unenthusiastic tone of voice-) "very healthy". I loved it though. Will make again.

    I've made this several times. It is so quick and easy. Makes a delicious side dish. Is best with a good amount of parsley, and I add a little extra lemon to taste and of course - seasoning is a must!!

    I made this to serve alongside some salmon and the lemony flavours worked really well. I was a bit concerned that my husband wouldn't be keen as he's not a fan of parsley but it went down very well.
