Chicken with lemon & courgette couscous

Add a touch of zest to your midweek meal with this low-fat family supper

Method

  1. Tip the couscous into a large bowl and pour over the stock. Cover and leave for 10 mins until fluffy and all the stock has been absorbed. Heat 1 tbsp oil and fry the courgettes until softened and crisping at the edges. Tip into the couscous, then stir in with plenty of seasoning and a good squeeze of lemon juice from one of the halves.
  2. Halve the chicken breasts horizontally and put each piece on a sheet of cling film. Cover with another sheet and beat each piece out with a rolling pin to make it thinner. Season. Heat the remaining oil in a large pan and fry the chicken for about 2 mins on each side until cooked through. Squeeze over the juice from the other lemon half and serve with the couscous and lemon wedges on the side.

    this is nice for a midweek healthy boost, but it's nothing special. i added a moroccan spice mmix to the chicken, think it would have been bland otherwise. the cous cous would have been nicer if the courgette had been crunchy.

    Really enjoyed this recipe. I followed the advice of others and added garlic & onion to the courgettes. Also used "spicy" couscous in case it was bland otherwise and it worked well. I'm not that keen on frying chicken so I used the griddle instead and it was delicious! Great for a quick & easy mid-week dinner - will make again!

    I cooked this last night, but made a few adjustments as otherwise could be a bit bland- i did the harissa spiced chicken from other healthy chicken recipe, and added some thinly slice leek cooked with courgette and before serving some thinly slice red pepper, and juice of 1 lemon and then juiced a lime over the chicken and couscous on the plate! bloomin delicious! very taste other half loved it! think it would have been too bland if i hadn't made those changes.

    I really like this as a quick midweek meal, with loads of black pepper in the couscous. Usually make extra and have the couscous with some salad and feta cheese for lunch the next day.

    We had this tonight and it was lovely. I have to admit I exchanged two of the courgettes for an onion and a carrot for a bit of variety (and also as courgettes are a little more expensive!) and grated them and cooked them as the courgettes would have been. I also added a tsp cumin to the couscous and a couple of cloves of garlic to the veg as it was frying. Yummy
