Chicken with lemon & courgette couscous

Method

  1. Tip the couscous into a large bowl and pour over the stock. Cover and leave for 10 mins until fluffy and all the stock has been absorbed. Heat 1 tbsp oil and fry the courgettes until softened and crisping at the edges. Tip into the couscous, then stir in with plenty of seasoning and a good squeeze of lemon juice from one of the halves.
  2. Halve the chicken breasts horizontally and put each piece on a sheet of cling film. Cover with another sheet and beat each piece out with a rolling pin to make it thinner. Season. Heat the remaining oil in a large pan and fry the chicken for about 2 mins on each side until cooked through. Squeeze over the juice from the other lemon half and serve with the couscous and lemon wedges on the side.

    I added a red chilli and garlic to the courgettes when frying and some coriander in the couscous at the last minute. Yummy, will definitely be doing it again!

    Absolutely beautiful meal, really easy to prepare, only one draw back the cous cous can go cold quite quickly but apart form that it was a very tasty dish!

    I used some cooked chicken instead of the fillets and it worked a treat. I also added some fresh coriander. A speedy tasty dinner, will definitely make it again!

    I actually only made the couscous and served it with meatballs. I added a can of chickpeas to the couscous and a roasted red pepper. It tasted yummy. I will definitely be making courgette cous cous instead of the plain old boring version from now on!

    Chicken was lovely but I also struggled to get any crunch in the courgette. Couscous v bland, greatly improved leftovers by adding leek and yellow pepper. Would make again.
