  1. Tip the couscous into a large bowl and pour over the stock. Cover and leave for 10 mins until fluffy and all the stock has been absorbed. Heat 1 tbsp oil and fry the courgettes until softened and crisping at the edges. Tip into the couscous, then stir in with plenty of seasoning and a good squeeze of lemon juice from one of the halves.

  2. Halve the chicken breasts horizontally and put each piece on a sheet of cling film. Cover with another sheet and beat each piece out with a rolling pin to make it thinner. Season. Heat the remaining oil in a large pan and fry the chicken for about 2 mins on each side until cooked through. Squeeze over the juice from the other lemon half and serve with the couscous and lemon wedges on the side.

Delicious, quick meal. I added garlic while cooking the courgette and a little paprika to the chicken. I did have difficulty getting the courgette to crisp up a bit. Any suggestions?

One of the quickest and best mid week recipes. Dont overcook the corgettes or they go mushy. the more lemon the better !

A great quick, easy and tasty midweek meal. We added some leftover toasted pine nuts we had to the couscous to give it a little crunch. We'll cook again.

Chicken was lovely but I also struggled to get any crunch in the courgette. Couscous v bland, greatly improved leftovers by adding leek and yellow pepper. Would make again.

Very jummy and easy to make! I used some ground coriander to season the couscous (well, I actually used bulgur), and I loved the result.

I actually only made the couscous and served it with meatballs. I added a can of chickpeas to the couscous and a roasted red pepper. It tasted yummy. I will definitely be making courgette cous cous instead of the plain old boring version from now on!

Absolutely beautiful meal, really easy to prepare, only one draw back the cous cous can go cold quite quickly but apart form that it was a very tasty dish!

I added a red chilli and garlic to the courgettes when frying and some coriander in the couscous at the last minute. Yummy, will definitely be doing it again!

I thought having lemon juice on the cous cous as well as the chicken would be a bit too much lemon, so I added paprika instead - which worked really well.
To save time and messing about with hammering the chicken I just chopped up the chicken breast and stirfryed it up with the lemon juice. I also added some black pepper to the chicken at the end.
With these extra flavours this dish works well, it would have been very bland without. I will definitely be making it again as a quick and easy midweek meal.

this is such a simple recipe and so delicious. Its become a favourite in our house very quickly, and is very handy now that we've got a glut of homegrown courgettes. I cheat slightly and use the lemon flavour cous cous available at various supermarkets
