Chicken with lemon & courgette couscous

Method

  1. Tip the couscous into a large bowl and pour over the stock. Cover and leave for 10 mins until fluffy and all the stock has been absorbed. Heat 1 tbsp oil and fry the courgettes until softened and crisping at the edges. Tip into the couscous, then stir in with plenty of seasoning and a good squeeze of lemon juice from one of the halves.
  2. Halve the chicken breasts horizontally and put each piece on a sheet of cling film. Cover with another sheet and beat each piece out with a rolling pin to make it thinner. Season. Heat the remaining oil in a large pan and fry the chicken for about 2 mins on each side until cooked through. Squeeze over the juice from the other lemon half and serve with the couscous and lemon wedges on the side.

    Very nice. I had cous cous, so didn't have to use polenta :) Still, I might try it with polenta one day... maybe.

    surprisingly tasty, quick too, added some peppers and spring onions to the couscous aswell which worked nicely. Used turkey steaks instead of chicken.

    Disappointing really, I think I expected it to be tastier, but was just a bit bland. Fine if you just want some 'fuel' midweek, but am not sure I will bother doing again.

    This went down very well. I did have to squeeze a lot of water out of the courgettes so next time I might use that to make the stock. I also added garlic. I'll definitely make this again.

    Absolutely delicious and easy to make for one - I used Knorr vegetable stock granules (1tsp) with 50g plain couscous, 1 courgette, half a lemon and 1 chicken breast. Tasted brilliant, filled me up and only took about 40min from start to final swallow!

    this is such a simple recipe and so delicious. Its become a favourite in our house very quickly, and is very handy now that we've got a glut of homegrown courgettes. I cheat slightly and use the lemon flavour cous cous available at various supermarkets

    I thought having lemon juice on the cous cous as well as the chicken would be a bit too much lemon, so I added paprika instead - which worked really well. To save time and messing about with hammering the chicken I just chopped up the chicken breast and stirfryed it up with the lemon juice. I also added some black pepper to the chicken at the end. With these extra flavours this dish works well, it would have been very bland without. I will definitely be making it again as a quick and easy midweek meal.
