  1. Tip the couscous into a large bowl and pour over the stock. Cover and leave for 10 mins until fluffy and all the stock has been absorbed. Heat 1 tbsp oil and fry the courgettes until softened and crisping at the edges. Tip into the couscous, then stir in with plenty of seasoning and a good squeeze of lemon juice from one of the halves.

  2. Halve the chicken breasts horizontally and put each piece on a sheet of cling film. Cover with another sheet and beat each piece out with a rolling pin to make it thinner. Season. Heat the remaining oil in a large pan and fry the chicken for about 2 mins on each side until cooked through. Squeeze over the juice from the other lemon half and serve with the couscous and lemon wedges on the side.

I sliced courgettes into strips rather than grated them to avoid the soggy results others mentioned. Also cooked it up with garlic, a chili and red onion. Extra lemon juice was added to the cous cous dish. I also sprinkled Moroccan seasoning on the chicken which I oven baked on a bed of cherry tomatoes. And extra lemon juice on this too. Simple and delicious. The family loved it!

I marinated the chicken in a little olive oil, 1 chopped garlic clove, some dried thyme and seasoning. I also fried another clove of garlic with the courgettes to add to the couscous. So easy and very tasty! My picky husband even liked it!

I made this recipe without modifying it at all and it was rather bland. Easy to make and healthy though, next time I'll add some flavours like the previous commentators suggested.

I did this yesterday evening for dinner and it was amazing :) Its very quick to make and it is delicious. I rubbed the chicken breast in olive oil and Lemon & herbs chicken seasoning.

Will definitely do this again!

Tried this tonight it was delicious! Added Chilli flakes and Garlic to the couscous mix as suggest below. Made half the recipe to feed 2 and there was still some left for lunch tomorrow... thumbs up!

Made this tonight, I read a few comments about the courgette releasing too much liquid when fried, so I squeezed all the liquid out before frying. I also added two cloves of garlic and dried chilli flakes to the pan then added to couscous. I grated the lemon zest into the couscous too, as well as half a lemon. My OH loved it! I did serve it with fine green beans however, as I only had 100g of couscous.

I didn't bother with the chicken at all..made the couscous with a herb stock pot, added courgette and mushrooms and chorizio! Yummalicious! Will definitely be having this again. I also reduced the amount made as I'm single and I still have enough for three meals!

Quick, easy recipe with few ingredients so great for a mid week dinner.
It was tasty, fresh & filling. Also a great way to make a chicken breast feed 2 as we try to eat less meat as we only buy free range which is obviously more expensive.
Really enjoyed cooking & eating this meal & didn't change anything.

I used half a knorr herb and olive oil stock cube. The couscous was delicious. Will definately be making again.

I liked this a lot and didn't find it bland ... Although the fact that I added a chilli and some feta to the couscous might have helped there :) It went down well with the Boy too, so I'll definitely be making it again.

Just made the couscous as a side for pork fillet with a Greek-style coating (Ainsley Harriot). Was extremely delicious and very filling (quartered the ingredients to serve one and there's plenty left for lunch!). Am only giving four stars as I feel 'seasoning' needs to be expanded. I added chilli and paprika flakes, which worked very well. Just ordinary seasoning would be too bland in my opinion. But this is definitely something I will make again - hopefully its just as good cold!

I added a small chilli and garlic when frying the courgette after reading the comments about it being bland. It worked really well and as it's such a quick and easy recipe I'll definitely make it again.

I added a preserved lemon and a garlic clove to the courgettes while frying and cut the oil to one teaspoon. I cooked the courgettes long enough for the water to evaporate. The chicken was cut up into bite size chunks and coated in a spoonful of harissa before frying. Delicious, very quick to make and uses up the courgette glut!.

Added some mint to the cous cous and cooked the chicken breasts in the oven with some cherry tomatoes which added a bit of extra flavour to the dish. Very nice healthy dinner.

I didn't add any extras to the couscous, but instead diced the chicken and rubbed in some cajun seasoning. I found this worked really well with the flavours from the couscous and really transformed the dish. Will be making this again!
