Method

  1. Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  2. For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

    Quite simply fabulous. Just like a great British puddings should be, oh so gooey! That toffee and pecans are best of friends is no secret, but the inspired and welcome addition of apples results in a killer combo. Simple to prepare, lush warm with lashings of cream, and equally scrummy cold with an afternoon cup of tea. Bring on the winter!

    Absolutely scrummy. Had to add cinnamon because I always have to have cinnamon with apple. Have got some blackberries in the freezer so can't wait to do a blackberry and apple one next time

    This recipe is fantastic - very easy and looks impressive as well as being v yummy. The only suggestion I have if you're trying this for the first time is to use a wide, shallow dish (I used a lasagne dish). The first time I made it I used a deep dish of the same volume and it didn't cook nearly as well. Enjoy...

    This went down a treat with the adults on Hallowe'en. Absolutely delicious - I cooked it in the oven for half an hour in advance then chucked it back in for another 15 - 20 mins to finish it off when we were ready to eat. Very easy to make.

    I made this tonight and I am kind of on the fence with it. I little to sweet for me but everyone else loved it. I used a shallow rectangular oven dish I am wondering if a round deeper one would have worked better? What did other people use? Will make again.

    Took this to a bonfire party and it was a great success will definately be baking it again. Will try walnuts next time to see how that works and like the idea of adding a little cinnamon.

    Just enjoying this with a spoonful of creme fraiche and its just gorgeous! It's soft and sweet, with the nice crunch from the nuts (I added brazil nuts instead of pistachios). This is definitely going to be one I will make again.

    Cooked it for about 50 minutes, but I reckon it could have done with a few more minutes, as the middle was still a bit soggy. It was way too sweet for my liking. I was not keen on the sludgy "toffee" sauce. Not a great success.

    This was a fantastic hit with the whole family and friends, really easy to make. Not one bit left over! I used normal eating apples as I had nothing else to hand and it was just great. Will be making this again, a real treat!

    Made this last night on a cold wet dark evening.... Hmmmm proper comfort food. Added some blackberries that needed using up and only had walnuts so used them and it was very well received. Will make again for sure. Makes a nice change from crumble .

    If you don't do anything else this weekend make sure you make this pudding. It is gorgeous! Looks pretty messy before it is cooked but went down a storm at our Bonfire party served warm with a small helping of vanilla ice cream. Great way of using up all those apples too.

    After reading some of the previous comments, I made this with 3 apples and used just 70g sugar in the batter. It was delicious and thoroughly enjoyed by all. Nice to have a change from apple crumble :)

    Have made this recipe quite a few times over the last 3 years. Sometimes add cinammon, but it's just as good without. Always a favourite, especially after Sunday lunch.

    a brilliant version of self saucing jaffa with apples i cooked it for friends and they loved it and a really simple dish to do. definitely recommend and will be doing again soon also good for those of us with apples trees and want something different to make.
