Method

  1. Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  2. For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

    Just made this for the first time. I don't like things too sweet so used 90g and 120g of the sugars. I didn't have pecans so used flaked almonds. It was really odd pouring the sugar liquid over the batter but it worked brilliantly once it was baked - like apple sponge and sticky toffee pudding combined! My oven is quite hot but the full time seemed perfect. It sank in the middle when it had sat a few minutes but it didn't spoil the taste.

    I made this pudding partly on the strength of the previous reviews and partly due to the delicious looking picture and although it was nice, I was slightly disappointed as was expecting something amazing! I found that the toffee sauce was quite flavourless and the whole pudding just to be sponge with sliced apples really. Prob wouldn't make this again - although maybe if I could thicken the sauce somehow and perhaps add some cinnamon to pep up the taste a bit it would improve. However, my guests seemed to really enjoy (though maybe they were just being polite!!)

    I don't really understand this dish - I was expecting something flavoursome, gooey, rich and sweet. I found it to be, however, quite bland and even though I used the full amount of hot water stated, there did not seem to be any toffee sauce in the dish, which was disappointing. I'm not sure why it was this way, as I followed the recipe exactly.

    Delicious! Just made this one, used some cinnamon in the batter (from suggestions so far, and it sounds like it deserved it!). I must admit that when I poured the liquid on top, I did think something along the lines of 'oh fudge-thats a waste of an apple, an egg, milk, flour...etc!' But I was definately pleasantly suprised with how it turned out-though the sauce was very liquid and only needed it in for the 40 mins. Would definatey recomend this one!

    Absolutely fantastic. Very easy to make, it can't go wrong. I used walnut pieces and almonds as that's all we had in and they worked really well. It looked an absolute mess when i put it in the oven but came out great. I served it warm with creme fraiche and a tiny bit of melted dulche de leche (a caramel toffee)

    Lovely pud, so easy and surprisingly light. I used a large shallow, oval Pyrex dish and 40 mins was just right. Will definitely make again and try the adding either cinnamon or ginger to give it a bit of extra zip.

    disappointing. baked for 40min, seems to have risen, but wheni put the spoon in had baked slices of aples in a watery toffee sauce with few claggy bits of mush

    It was ho-hum. Didn't taste awful but not as great as I thought it would be. The sponge was light, there was plenty of sauce but the flavours didn't come out. It didn't seem to taste much of apple, sponge or toffee sauce. Incidently, I only baked it for 40 mins and I used hazelnuts and not pecans. It didn't scream 'make me again!' and I probably won't. This is one of a very few disappointing recipes (for me) on this excellent website.

    I found this took way longer than the recipe said. I took it out after 1 1/4 hours and it was still not the golden risen pudding I was hoping for. Nor did I have a lovely toffee sauce, just a sludgy fudgy mix at the bottom of the dish. Tasted nice though, but not what I was expecting.

    I made this last night, it was so easy. I added cinnamon and sultanas to the apples. It looked like a big mess when I put it in the oven but it came out perfectly after 40 minutes and was absolutely lush! Highly recommended.

    Devine, my partner told me it was better than apple pie! I left it sitting for about 2 hours before eating it, this allowed the sauce to thicken up. Had it with ice-cream and double cream - a real treat. I shall definately be making it again.
