Method

  1. Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  2. For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

    Lovely recipe. Whole family enjoyed the pudding (all adults). Will make again. Needs a huge container, I used large lasagne basin. Measure the amount 3.5 pints first to make sure. My first pot would have been too small. Serves six adults easily. I chopped the apples in cubes rather than sliced. Will add dried fruit next time. Did not add vanilla. Remember to melt butter first.

    I made this pudding a couple of days ago. I just now finished off the rest. You do need quite a big container, I used a souffle dish. It's certainly for people with a sweet tooth and there's probably quite a few calories in, but who cares? It could do with cooking slightly longer than stated. Anyway, I will be making this one again very soon!

    Turned out to be completely raw in middle. Wish I'd read the comments about cooking it for longer than stated - I reckon it could have done with an extra 20 mins at least.

    This sounds wonderful, and I will make it for the holidays. In the meantime, I'm looking for a recipe for a toffee apple tart like the one I had at The Willow Tea Room in Glasgow. It had a shortbread crust, and the filling seemed to be a very dense, moist apple cake. It was topped with a smooth layer of sticky toffee and served in slices like a pie. Anyone have an idea of where to find such a recipe? Thanks!

    My husband said it was the best pud I've ever made (I've made a few in my time). It's so easy to make, looks fab when it comes out of the oven and just tastes wonderful. Will become a firm family favourite in our house!

    I made this when we had friends to dinner, it was really easy to make, I added 1 teaspoon of cinnamon and it went down a treat, everyone loved it!!!! Will definitely be making it again!

    Having read the other comments, I made up half the recipe, used much less sugar both in the batter and the topping, used more apple and pecans, added plenty of cinnamon and cooked this half recipe for 40 minutes. Result! Lovely, different, cheap dessert.

    Easy peasy, wicked pudding! Make sure your dish is big enough - the first time I made this I used one too small and wasn't able to fit all the toffee liquuid in which was a shame. Second time I used the right size - its so gooey! The apples are best if they are sharp cooking apples to cut through the sweetness. Almost a steamed pudding constistency. Will definately keep this as a regular - tastes just as delicious warmed up the next day.

    This pud is delightful and very easy to make. It was a little bit sweet when piping hot, but when cooled, I found that all the flavours mingled pretty well. I might add less sugar in the batter next time, and maybe, a pinch of cinnamon with apples. Oooh, yammmm!

    Yummy pudding! As other comments I will add cinnamon next time - or perhaps maple syrup. It did take 60 minutes to cook, but our oven is not the most reliable. Mmmmm.
