Ingredients

  • 85g butter, melted
  • 140g self-raising flour
  • 100g golden caster sugar
  • 1 tbsp baking powder
  • 200ml milk
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 2 Bramley apples (or other cooking) apples, peeled, cored and sliced

For the topping

  • 140g dark brown sugar
  • 50g pecans, roughly chopped

Method

  1. Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  2. For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

Sensational! Complete silence round the table, except for "mmmms" of delight. Very, very easy to make, but did need an extra 10 minutes in the oven.

This was amazingly simple and yet very tasty and actually considerably lighter than I thought it would be. Great for children and adults alike.
Like some of the other reviewers, the whole putting the water mixture on was a bit bizzare but just follow the recipe and you have a tasty, warming dessert that sits beautifully with cream, ice cream or goood ole custard.
Loved it!

Never has anything gone in the oven looking so wrong, yet come out looking and tasting so good. Wow, this is lovely and yummy for such little effort. I have tried a couple of these boiling water affairs before, including a Nigella one, but the all ended up with a dry top and uncooked batter underneath. I would urge everyone to give it a go. Just the thing after a nice long Sunday run!

I was so looking forward to making this after the rave reviews but even though I followed the recipe to the letter, it was the most bland, tasteless thing I've ever done! I couldn't taste the apples, there was plenty of sauce but certainly not toffee tasting and the pudding itself had no taste. First time I've ever had leave a negative review on here, back to the drawing board on my search for a dinner party pudding!

Yummy and easy recipe. However I would go for toffee apple crumble over this, but it did make a nice change.

Just made this for friends and it went down really well. The batter hadn't cooked quite as well as I'd have liked in the middle, but it was lovely and crispy on top and fluffy at the sides. Didn't have any dark brown suggar so I made a concoction of golden caster sugar and molasses which came out surprisingly well. Only had one cooking apple, so used that with 4 small normal eating apples. They had a bit more of a tangy bite to them, which was nice and prevented this from being sickly. Will definitely make again, it was lovely and very easy.

I am not a "pudding person" but I had to go back for seconds, thirds ..... A must try, you won't be disappointed.

Really nice pudding, I would allow an extra 15 - 20 mins cooking time though!

Loved this! I used eating apples, as I have an excess, and light brown sugar instead of dark as that is what was in the cupboard, it had a lovely golden syrup flavour.

What is golden caster sugar ? can I just use a light brown sugar ? I live in Holland so I need an alternative .

I cooked this for a work "bring a dish" event and for last years family christmas dinner. This afters seems to taste even better a day or two later (not sure why though!) - so if its not all eaten on day one - keep it!

Lovely, a very unusual recipe,,couldnt believe that you made a batter then poured the sugar water over it but it worked! I added cinnamon to the batter and flaked almonds on the top..that was all I had..it was delicious

Made this pud with apples from mum's tree and it was a massive hit. Everyone loved it from the elders to the little ones especially delish served with Kelly's Cornish ice cream. Definitely five stars and easy to boot. And to scoff.
