Method

  1. Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
  2. For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

    Great and easy pudding. Went down a treat with teenage boys after a soccer tournament...not even the scrapings left. Works with apples other than Bramleys as well, as these are not easily obtainable in Brussels!

    This is fantastic and so easy. Don't be scared at the amount of liquid you pour on top. The first time I made it I chickened out and reduced the amount and deprived my guests of lots of gooey toffee sauce. I like it served with Creme fraiche

    Mine needed 60 minutes to bake but it was delicious. I used walnuts instead of pecans, and next time I may add some cinnamon as well. This is a lovely dessert!

    Made this pud for after a roast on sunday. My family loved it! I was a bit scared pouring the liquid sugar over the batter but followed what it said, it worked out really well! Next time I may add another apple as I found it a bit sweet.

    Fabulous, easy pud, made several times with the children's help! Used Cox apples which worked very well and didn't have the nuts but still extremely yummy, even though it looks pretty dreadful before it goes into the oven! (Mine usually takes close to an hour to cook)

    I have just made this pud. The result went very well. My husband and my friend loved it and gave me lots of compliments. The fact is, I am from Thailand and it is my first time to make this kind of pud. I was worry about pouring the lot of liquid to the batter. I have been cooking the cake for 2 years so I know how to check the cake has been cooked but I did not know how to check this pud when it is cooked or not done yet, especially, when you have o pour the liquid in to the cake batter. I cooked it for about 1.10 hours and I inserted the skew to the cake and it came out clean but when I left the pud cool down and served. it seemed to be a little wet in the center. Is it supposed to be like this texture or my pud had not been cooked properly.

    I made this yummy pudding for the first time today, I found it while looking for some thing other than pie to make with the excess apples we had. We only had eating apples so I used less sugar, and didn't have pecans so used almonds. It could have done with a bit longer in the oven though, even so my husband rated it the best pudding he had ever had. I think I might add some cinnamon next time I make it which will probably be sooner rather than later.
