Mustard-glazed salmon with cannellini beans, lemon & rocket

Method

  1. Mix the honey and mustard with a splash of lemon juice and seasoning, then marinate the salmon in it for a couple of minutes.
  2. Heat 2 tbsp olive oil in a small pan, add the garlic and cook gently for 3-4 minutes. Add the beans and warm through. Add the rest of lemon juice and the zest and season.
  3. Grill the salmon for 7-8 minutes until just cooked through (no need to turn over). Toss the beans with the rocket and serve with the salmon.

    A nice way to serve salmon, quick and easy. I served it with the rocket salad and some mash.

    I had this for luch today and I was really pleased with it, I will definitely be making it again. The dressing on the salmon was tangy and sweet and the beans with garlic complimented it very well. For me, the beans needed quite a bit of seasoning, but I'm new to cannelloni beans and I suppose it's personal taste. I followed the recipe as it is and just added a few cherry tomatoes and spring onion to the salad.
