Cheesy tuna melts

Method

  1. Preheat the grill on its highest setting. Drain the tuna, flake it into a bowl and mix with the spring onions and mayonnaise. Season with salt and plenty of freshly ground black pepper.
  2. Toast the bread under the grill until it's nicely browned on both sides, then spread the tuna mixture on top, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
  3. Slice in half, sprinkle with paprika and tuck in.

    Simple and well liked....we preferred to add a bit of mustard to the mayo and cheese before toasting :-)

    This is good and tasty - I prefer my own recipe, which I've made for years, using a mixture of mayo and tomato ketchup mixed with tuna and grated cheese, with or without onion.

    My favourite sandwich! I also added finely diced red pepper and a tablespoon of chopped shallot, lightly sauteed in olive oil. Hmmmmm.

    Good bread is a main key to this. Good sturdy whole grain. Like to use mustard in the mayo and will be trying allesandras idea of the red pepper. To make a meal we have it with a bowl of tomato soup. Great on a cold day.

    Completely foolproof! Just made this for lunch & it was so easy & delicious too! Used 4 pieces of bread for 2 people & added finely diced pepper as suggested by allessandra. Will be making again soon!
