Simnel muffins

Method

  1. Tip the fruit into a bowl, add the zest and juice and microwave on medium for 2 minutes (or leave to soak for 1 hour). Line 12 deep muffin tins with paper muffin cases.
  2. Preheat the oven to fan 180C/ 160C/gas 4. Beat together the butter, sugar, eggs, flour, spices and milk until light and fluffy (about 3-5 minutes) - use a wooden spoon or hand held mixer. Stir the fruit in well.
  3. Half fill the muffin cases with the mixture. Divide the marzipan into 12 equal pieces, roll into balls, then flatten with your thumb to the size of the muffin cases. Put one into each muffin case and spoon the rest of the mixture over it. Bake for 25-30 minutes, until risen, golden and firm to the touch. Leave to cool.
  4. Beat together the icing sugar and orange juice to make icing thick enough to coat the back of a wooden spoon. Drizzle over the muffins and top with a cluster of eggs. Leave to set. Best eaten within a day of making.

    I love the fact that these are individual muffins rather than one large cake. It makes them so much more versatile. I can freeze and have as many or as few as required at any time, a few friends or a larger dinner party. a very tasty and generous sized treat, I love them and have used this recipe many times.

    I made these this easter for my Mum visiting and she said these were the best Muffins she had ever tasted. The recipe was easy to follow and will definately make these again!!!!

    These are great. Filled the house with fantastic spicy aromas. Made them last night for the office team, don't think they will last long. I actually left out the marzipan as not everyone is a fan and just added 50g of ground almonds instead.

    I'm just wondering a couple of things about this recipe as I plan to make them on Easter Sunday for breakfast. My questions are 1) does it mean fan 160 C as it has put the fan at 180 but i thought fan you always took of 20 degrees? 2) it states to beat the mixture really well but for other muffin recipes i have followed, it says one of the main things to sucessful muffins is not over mixing...Please if anyone could help that'd be great as i'd love to get them perfect first time! Happy Easter x

    I made this recipe not too hopeful, wondering how they were going to turn out as I had never made simnel cake or muffins before. However they turned out perfectly! They had risen well and the icing was just delicious! My whole family really enjoyed them and have asked me to make another batch for the easter weekend! They were gone in 3 days! Making another batch tonight and will again be pleased with the result. Delicious!

    Aimee..I used Fan 160 and they were fine.Used an electric hand mix only for a minute until combined.It doesn't look like the lumpy batter of an American muffin mix.. Have a go,they are v easy.

    Just made these and they are DELICIOUS!! Well, at least my daughter and I think so. My Hubbie and son don't like raisins so all the more for us!!!! So easy to make, except I found it really hard to beat by hand until the fruit was in and then it mixed much easier and my oven is a pig so I had to cook them for 35 mins at fan 160 but it didn't dry them out at all. 1st time I've made these and I will DEFO do it again, might even make some to give away......

    Easy to make, look and taste delicious. All the flavours of a Simnel cake in a muffin - what more could you ask for! I added some ground almonds aswell as the marzipan to increase the almondy flavour - lovely.

    Made these on Easter Sunday, they were nice but making 12 from that mix makes very generous muffins! I only put marzipan discs in 6 of mine because my other half doesn't like marzipan at all; interestingly, the 6 without marzipan rose much higher than the others, so if you don't like marzipan, then make twice as many from the mixture otherwise they're a bit too big!

    Made these for easter sunday they were so easy and kitchen smelt wonderful with the aroma. the icing tasted lovely and they were so moist looked great too will defiantaly make them again. x
