Ingredients

  • 450g new potatoes, cut into bite-size pieces
  • 3 smoked mackerel fillets, skinned
  • 250g pack cooked beetroot
  • 100g bag mixed salad leaves
  • 2 celery sticks, finely sliced
  • 50g walnut pieces

For the dressing

  • 6 tbsp good-quality salad dessing
  • 2 tsp creamed horseradish sauce

Method

  1. Boil the potatoes for 12-15 mins until just tender. Meanwhile, flake the mackerel fillets into large pieces and cut the beetroot into bite-size chunks.
  2. Drain the potatoes and cool slightly. Mix the salad dressing and horseradish sauce together in a salad bowl and season. Tip in the potatoes – they should still be warm.
  3. Add the salad leaves, mackerel, beetroot, celery and walnuts, and toss gently. Serve with crusty bread.

Trying to increase our intake of oily fish and this hit the spot. It's a lovely addition to my armoury and is in my favourites binder for sure. I only put one tspn of horseradish as I thought it might overpower, but will stick to the recipe next time!

Delicious!! One of the nicest salads I've eaten. Made the dressing as mentioned. Flavours really compliment each other. Will made again!!!

Made this for my family a few weeks ago, was delicious, they all loved it. The mackerel and beetroot worked really well together, and the walnuts gave it a nice crunch. The only thing I did differently was that I roasted and honey-glazed the beetroot before putting into the salad, which really brought the flavour out even more.

Very good recipe and very tasty dish. I didn't use the celery as I forgot to buy it in the shop, my dinner guests were pleasantly surprised and we all enjoyed it a lot.

Fabulous flavours all working really well together. Didn't have the potatoes on this occasion but it was still lovely - would recommend.

Really lovely warm salad. I didn't have walnuts but added in samphire and used horseradish sauce neat. It was really very good.

Delicious. Changed nothing, added nothing. Fed 4 of us easily and converted a non beetroot eater into a beetroot eater. For a diabetic in our company served with oatcakes instead of bread. Everybody loved it.

Delicious. The combination of flavours and textures worked really well. My hubbie said he didn't like beetroot but he loved it this way.

Absolutely love this recipe! Using our own home grown beetroot helped :-) I did use a different dressing though made from half a red onion thinly sliced, olive oil, lemon juice, s&p and chopped mint. This super-tasty salad is now a firm mid-week favourite.

Absoutely love this Salad! We didn't have any horseradish but there was some Wasabi kicking around in the fridge and it worked really well! Gave it a nice kick, I recommend it.

This is fantastic use for smoked mackerel. I too didn't think the flavours would work but both my partner and I agreed it was delicious, looked good and I will definitely do it again. Resent buying celery when I don't use it for anything else, so swapped it in the recipe for red onion.

I made this without beetroot, and swapped celery and walnuts for sauteed leeks and hazelnuts. My husband and I thought it was lovely - the kids were not so keen, probably because they don't like leeks!
