Ingredients

  • 2 tbsp olive oil
  • 1 tsp coriander seeds
  • 1 tsp cumin seed, plus extra to garnish
  • ½ tsp ground turmeric
  • ½ tsp mustard seeds
  • 1 large onion, cut into 8 chunks
  • 2 garlic cloves
  • 675g parsnips, diced
  • 2 plum tomatoes, quartered
  • 1.2l vegetable stock
  • 1 tbsp lemon juice

Method

  1. Heat oven to 220C/fan 200C/gas 7. In a bowl, mix together the oil and spices. Add the vegetables and mix well. Spread over a heavy baking sheet, then roast for 30 mins until tender.
  2. Spoon into a food processor or liquidiser with half the stock and process until smooth. Pour into a pan with the remaining stock, season, then heat until barely simmering. Remove from the heat and stir in the lemon juice. Garnish with cumin seeds.

I roughly quartered this recipe to use up a couple of parsnips that were going limp in the fridge. Didn't have mustard seeds and used ground coriander instead of coriander seeds and vine toms instead of plum but end result was still great. The squeeze of lemon juice at the end made the dish!

Superb soup a real winner. I am hopeless but even I could make this, even with my daughter making cakes at the same time!

This is a great winter warmer, very easy to do and the added lemon juice really adds a zing to it.

feel bad leaving a bad review as everyone else seems to love this soup, but m y husband thought it was just OK and I couldn't eat it. I made it exactly like the recipe says but I didn't like it, I found the tomatoes overpowered it.

Lovely soup, v easy recipe, I used on the vine tomatoes as I couldn't get Plum ones, but it was still lovely!

This soup is delicious. I added 1/2 teaspoon of chilli cayenne just to give it an extra kick. Low fat, low calorie, huge taste. Delivers everytime

Unlike some of the some mavericks above, I stuck to the recipe and it is absolutely delicious. Even the trickle of lemon juice at the end makes a difference. I've made a few parsnips soups in my time but nothing so simple and fresh tasting. Healthy too!

really really tasty. dont need to much as quiet a filling soup but so good and really easy to make. excellent with fresh crusty bread....yum!

Loved this soup! Added a couple of carrots for extra colour, plus extra spices (as like spicy foods!), cooked it all on the hob & was a great success! I especially liked the lemon which added to the flavour. Will be making again this winter.

I was planning to make this soup over the weekend but was horrified to find that my local supermarket had sold out of parsnips (i think everyone was making this soup). I decided to go with carrots instead as they were in abundance. So how did the 'spicy roasted parsnip soup without parsnip but with carrots' turn out? and the answer is totally yummy and scrumptious and the prefect end to a rainy cold day! Great flavour combinations - thank you thank you :)
