Method

  1. Heat the oven to 200C/fan 180C/gas 6. Peel and trim the roots of the onions but leave them whole. Cook in a large pan of boiling water for 25 mins until tender, then drain, reserving a little cooking water.
  2. Season the cream and mix in 2 tbsp of the onion water. When the onions are cool enough to handle, slice each in half through the root. Lay the onion halves, cut side down, in a large baking dish with the bay leaves. Pour over the cream, scatter with the Parmesan, and bake for 25 mins until the cream is bubbling and the onions are just beginning to brown.

To prepare the onions up to a day ahead, assemble the dish without the Parmesan, then chill. To serve, scatter with the cheese, then bake.

    I made this recipe for our neighbours who have been so very kind to us over the last few months . I loved this recipe. It was so easy to prepare and I served with Butterfly of Lamb stuffed with Goats Cheese and fresh herbs. Mixed Beans, Roast Potatoes, Asparagus and Red Wine Gravy Tasty, Easy to Cook and very pleasing to the eye.

    I made this for a meal last night and it went down a treat. I used 3 large onions so cooked them for 35 mins but that was the only change. A great easy to make dish.

    Made this with caramelised ham shanks, crispy fried potatoes and mustard greens with ham gravy - even the fussy-eater daughter asked for more, so a big success!

    Had these today with roast lamb shank, roast chantenay carrots, roast new potatoes in olive oil, garlic and rosemary. They were delicious - none went to waste at all!

    Wasn't sure about this at first but really easy and delicious. Used red onions and added thyme to the cream and didn't bother with the Parmesan -turned out fine. I will definitely be making this again as it was gobbled up!

    So lovely ! I've made this a couple of times. I added fresh thyme to the cream and left Tito infuse for a while before pouring it over the onions. I didn't addd any cheese and the dish was certainly full of flavour. Give it a go - delicious !
