Herby bean sausage stew

A simple, filling storecupboard chipolata stew that can be whipped up in minutes or slow cooked for hours

Method

  1. Heat a large non-stick frying pan, then brown the sausages for 3-5 mins over a high heat. Drain the beans, then add to the pan with the chopped tomatoes, herbs and sugar. Season well and bring to the boil. Simmer for 10 mins until the sausages are cooked through and the sauce has thickened, coating the beans.

Adding sugar

Adding a little sugar to a tomato-based sauce brings out the natural sweetness of the tomatoes. It's also a great way to perk up under-ripe fresh tomatoes.

IF YOU WANT TO USE A SLOW COOKER

Brown your sausages in a non-stick frying pan over a high heat for 3-5 minutes. Transfer them to the slow cooker pot with the beans. Add one can of tomatoes, then just the chopped tomatoes from the other can- sieve away the juice. Stir in your herbs and sugar with some seasoning, then cover and cook on Low overnight or for up to 8 hours.

    I have made this several times with the chipolatas and with vegetarian sausages. Once I accidentally bought mixed beans in tomato sauce so I just left out the sugar. Definitely a family favourite.

    It's a long time since i've cooked anything as visually unappealing as this. It looked like slop - everything swimming in the tomato juice. Good for students i suppose but there must be some very easily pleased people out there - either that or i'm not as bad a cook as i thought!! Would have been a waste of the lincolnshire sausages i was going to use in it - glad i only used veggies - do yourself a favour - give this a miss i'm only giving it a one star in case it won't let me give it none - frankly i'd give it a minus.

    This is a really tasty meal thats so cheap to make,I added some chopped bacon to it just to add some extra flavour and depth,and used 2 tins of mixed beans in tomato sauce and 1 tin of chopped tomatoes....will definetely make it again.

    Hmmm not very appealing if you follow the recipe exactly...although to make it much nicer, i added a chopped fried onion, crushed garlic and thickened it with some gravy granules...lovely with some buttery mash and doesnt add to the cost too much if you are on a budget :)

    I love this recipe and make it about once a month. I do however add a bit of hot chilli powder and instead of using 2 tins of tomatoes I use 1 and also add a beef oxo stock, and then reduce the sauce down, it gives it a lovey rich taste with a bit of a kick

    Quick, easy and very tasty. It also smelt delicious when it was cooking. I used dried mixed beans (soaked overnight), added a bit of bacon that I had leftover in the fridge and served it with creamy mashed potato. A great, winter warmer, especially when you�re on a tight budget.

    I'm a very lazy cook, when catering for myself, so I love this kind of recipe. It's easy to adjust with different herbs or sausages so you can make it as simple or as richly flavoured as you like. Tonight I'll be adding roasted red onions, using paprika sausages and serving it with roasted new potatoes & green beans.

    I came across this recipe for the first time last week and had a go. I made it in bulk in the slow cooker, putting the rest in the freezer. We really enjoyed it, I served with a jacket potato. I will make more often during the autumn / winter months. A very good, cheap store cupboard recipe.
