Sizzling salmon with bean mash

Method

  1. Set the grill to its highest setting. Put the salmon fillets flesh-side up and evenly spaced in a shallow flameproof dish. Finely grate the zest of the lime into a bowl, then squeeze in the juice and stir in the honey, mustard and a good sprinkling of salt. Pour the mixture over the salmon and grill, without turning, for 5-6 minutes until it's golden on top and cooked through (check the centre with a fork).
  2. Meanwhile, tip the beans into a saucepan and add the butter, crème fraîche, garlic and plenty of salt and pepper. Turn the heat on to moderate and coarsely mash everything together - a wooden spoon or a masher will do the job - until hot and bubbling. This only takes a few minutes as the beans are already cooked.Tip in the rocket and stir into the mash until it's hot and just wilted.
  3. Serve the salmon on the mash, drizzled with the cooking juices.

    I really like this recipe. The bean and rocket mix is very tasty. The men in the house found the sweet salmon not to their taste but perhaps with slightly less honey I could persude them to eat it again.

    This is so quick and easy to make. A perfect midweek meal thats tastes delicious and more filling than you think it'll be. I sometimes replace the rocket with watercress and add an extra bit of butter and creme fraiche - yum!

    Bean mash lovely. I used half the suggested amount of honey in the salmon marinade and it was very nice, but still a little too sweet. I'll use less again next time. (I used less mustard too).

    i think this recipe is a marmite one,love it or hate it ! unfortunately i thought it was awful claggy, funny mix of flavours just yuk, its rare that i cant finish a plate. however my mum thought it was " nice " no more.. i guess its personal taste. i think it was the beans that i found more offensive than anything which is a shame as i was looking for a nice replacement for tatties.

    We have made this countless times. I often replace lime with orange. As others have written before me, the beans go well will all sorts of things. Divine. We can't always get creme fraiche so sour cream is good.
