Ingredients

  • 500g sweet potatoes, peeled and cut into bite-size pieces
  • 1 tbsp olive oil
  • 4 skinless chicken thigh fillets, each cut into large chunks
  • 1 large red onion, cut into wedges
  • 2 tbsp rogan josh curry paste
  • 2 large tomatoes, roughly chopped
  • 125g spinach

Method

  1. Cook the sweet potatoes in boiling, salted water for 5-7 mins until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 5-6 mins until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 min, add the tomatoes, then cook for another min.
  2. Pour in 100ml boiling water and mix well. Simmer for 5 mins, add the spinach, then cook for 2 mins until wilted. Fold in the potatoes and heat through. Serve with rice and naan breads.

Great curry really enjoyed this didn't add as much water as it says to as i prefer a thicker sauce i hate runny curry, I added tinned tomatoes and some cherry tomatoes also some chilli flakes loved the sweet potatoe in it I will be making this again :)

Really easy to make and tasty - plus simple enough to halve for two people. I did as others have mentioned and wanged in some coriander and a tbsp of half fat creme fraiche for an extra dimension. Lovely!

Absolutely love this recipe!!! I added extra chicken and veg ie. green peppers, red peppers, mushrooms and chillis for my own taste. So tasty, healthy and filling!

Used yellow thai paste and coconut milk, instead of water and rogan josh paste! Was trully delicious! will cook again... !

This went down a treat especially with partner who insists he doesn't like sweet potato??? Even had second helpings - men eh :-). Will definitely make again

I used green beans instead of spinach and I added some coconut cream to thicken the sauce.

Would definately make again.

Made this dish twice in one week! Having never made a curry before it was so easy. I added in creme fraiche at the end to give it a better consistency. Made me want to try more curry recipes because it was like a 'take away'. Yum

A great home made curry - I added some red and green pepper and mushrooms that needed using - very tasty and the sweet poato means no need for rice- served with warmed pitta bread! Will make this again!

Really tasty and so easy to make. Great as a student meal too. We made it between four of us and it cost less than £1.50 each. Will definitely be making it again.

I used chicken breasts instead. Even eight year old son loved (tried it with his eyes shut! ate lot)
