Method

  1. Blitz half a punnet of raspberries (about 150g) in a blender with a little icing sugar.
  2. Slice a peach and divide it between two tall glasses, layering it with remaining whole berries, scoops of vanilla ice cream and raspberry sauce.

    This was very refreshing & pretty easy to make as well as healthy. I didn't have any icing sugar so used apple juice concentrate as a sweetener, this made the sauce a little runnier but was still very tasty! I'm sure frozen yogurt could be used instead of the ice cream too to lower the calories.. Found the raspberry seeds annoying as they always are getting stuck in my teeth! So would maybe push the sauce through a sieve next time.
