A quick and easy way to turn a tub of ice cream into an indulgent treat

- Coat the pineapple slices with icing sugar. Caramelise in a hot non-stick frying pan.
- Serve hot, drizzled with rum or Malibu and topped with scoops of coconut ice cream and passion-fruit pulp.
