Mexican lime chicken

Method

  1. Mix 2 tbsp olive oil with 1 tsp each crushed coriander seeds and grated lime zest and 1⁄2 tsp each paprika and light muscovado sugar.
  2. Put 2 chicken breasts in a baking dish, spoon the marinade over, then squeeze over a little lime juice. Cover and marinate for 30 minutes.
  3. Slip 1-2 lime slices under the skin of each breast and season. Tuck 6 unpeeled garlic cloves and 2 fresh red chillies around the chicken.
  4. Roast the chicken breasts in a baking dish, uncovered, for 30-35 minutes in a preheated oven (190C/gas 5/fan oven 170C). To check if they are done, prod the chicken with your finger - if it's still a bit soft, give it a bit longer.
  5. Serve with salad and salsa.

For the juiciest chicken

Keep the skin on. If you're bothered about fat and calories, take it off before eating. If you do remove the skin before cooking, compensate by wrapping the chicken breasts or giving them a tasty coating. This helps keep in the juices, stops the chicken from drying out and adds flavour.

Which Chicken?

If you want the chicken itself to actually have some flavour, start with the best quality. Organic free-range corn-fed chickens have the most taste.

Roast on a bed of fresh herbs, chopped garlic or sliced onion.

    Made this recipe last night and it was SO tasty!! I ended up marinading the chicken for longer than half an hour and the chicken was so juicy and tender! Will definately cook this again!

    I didn't have time to marinate it as long as the recipe said but it was a bit lacking in flavour. I also found that a lot of the marinade went on the skin which I then took off before I ate because I don't like it. Next time I might rub the marinade under the skin. I might also make more marinade by increasing the amount of sugar and seasoning and making it with smoked paprika instead of plain.

    Hia, im going to be making this to on sunday for a romantic birthday dinner for my partner I want to make it with couscous.... Im very good in the kitchen being a ex-chef but i cant decide what kind to make and what to put in it, dose anyone have any ideas? I was thinking a pepper, lemon couscous maby with some courgette? Thanks! Jaz

    It was yummy. I made this with a skinless chicken breast and it still remained tender by having the lime slices on top. Next time I shall add even more lime zest and juice.

    I thought this was very tasty. I used skinless chicken breasts, crushed a couple of garlic cloves and put it in the marinade and I chopped the chilli's and sprinkled them on top then layed the lime on top. I did cover it with foil for the 1st 15 mins so it didn't dry out and it worked well. I served it with homemade salsa.
