Spicy chicken couscous

This quick one-pot Moroccan dish is perfect for a summer supper

Method

  1. Prepare couscous with chicken stock, according to the packet instructions. Heat olive oil in a pan and cook the onion for 2-3 mins until softened.
  2. Toss in chicken breast fillets and stir fry for 5-6 mins until tender. Add the blanched almonds and, when golden, stir in the hot curry paste and cook for 1 min more.
  3. Add the couscous along with the apricots and the coriander. Toss until hot then serve with plain yogurt if you like.

    Quick, easy and tasty! Its nice that you can alter the strength dependent on what curry paste you buy! I went for the Madras which gave it a real kick! Even nice cold for lunch the next day!

    Really easy to make. Very tasty although mine seemed to turn out a little dry, perhaps I needed to add a little extra curry paste? Anyway, would def cook again as very quick so great for mid-week dinner.

    Delicious! Served it with the Lemon Lamb with warm chickpea and parsley salad. Definately be cooking this again. Will serve it with a greek-style salad next time.

    Took advantage of an unusually warm October evening and made this to go with a simple rocket salad. Very quick and tasted great! Added chickpeas and used a milder curry paste - was trying to be kind to our 5 and 3yr old, onto whom I frequently inflict spicy food in the hope of cultivating a love for it! ;) They LOVED this! Will make again - would be great for a BBQ!
