A healthy alternative to wheat plus it's gluten free too. A great snack.

  • Ingredients:
  • 1/2 cup uncooked quinoa
  • 1 large egg
  • 1/2 cup chopped onion
  • 1/2 cup Feta cheese
  • 1 tsp minced garlic
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Pinch of salt
  • Salsa sauce for dipping


    1. Heat the quinoa with 1 cup of water and cover. Once boiling, reduce heat to low, and simmer for 15-20 minutes (until water is absorbed and quinoa is tender).
    2. Preheat oven to 180C/350F/Gas Mark 4. Combine all of your ingredients (except the salsa sauce) in a mixing bowl until it is well mixed.
    3. Lightly spray the bottom of a mini-muffin tin with olive oil spray. Scoop 1 tbsp of the mix into each muffin tin.
    4. Place in the oven and bake them for 15-20 minutes and let cool.
    5. Serve them warm with salsa sauce to dip in.

I'm glad you liked the recipe and it looks great on your blog. I plan to put more healthy recipes on here - all are free from dairy, wheat, gluten and sugar.

Hi Bing, sorry for the delay, I didn't realise I had a message on here. 1 cup = 240ml so 1/2 cup = 120ml. A cup is really an American measure. I hope that helps. Paul

Delicious! I just made these as a sort of lunch/breakfast and had them with some homemade salsa! I was afraid one egg wouldn't be enough to keep them together, but it did :D Will perhaps aff some chilli- and paprika powder to them next time :) Because there will be a next time! :D Great source of protein :)

These sound delicious. I have jotted the recipe down in my notepad and will definitely be making these in the near future! I foresee a post on my blog if they turn out as tasty as they look here, which I'm sure they will :D
