Grilled summer berry pudding

Barney Desmazery's hot berry dish is a delicious low-fat alternative to the traditional pudding

Method

  1. Preheat the grill to high. Lay the slices of bread slightly overlapping in a shallow flameproof dish. Sprinkle about 2 tbsp of the sugar in an even layer over the bread and grill for about two minutes until the bread is toasted and the sugar is just starting to caramelise. Mix the cornflour into the fromage frais.
  2. Pile the fruit down the middle of the bread and sprinkle with 1 tbsp of the sugar. Drop spoonfuls of the fromage frais mixture on top, then sprinkle the rest of the sugar over evenly.
  3. Put the dish as close to the heat as you can and grill for about 6-8 minutes, until the fromage frais has browned and everything else is starting to bubble and turn juicy. Leave it to sit for a minute or two, then serve hot, spooned straight from the dish.

    Tried this recipe but was not impressed. Sugar did not caramalise as stated, even though I could not have got it any nearer the grill, but everybody said they enjoyed it.

    I used a very shallow dish and very hot grill for this and think this helped in getting the sugar to carmalise. Very good result.

    I love this pud. I've made it loads of times and is a family favourite. I usually make it with frozen mixed berries which works out less expensive than fresh berries. It's quick, yummy and low in calories too. The perfect pud!

    I love this! I tried adding a bit of lemon juice to the fromage frais and used waffles which worked just as well! Will make again without a doubt!

    Have made this twice now & everyone liked it. One thing tho' the base of the bread is unviting- can this be improved upon? Used frozen berries & added more blackberries- delicious.

    I made this last night and everybody was raving about it!! They said it was one of the nicest deserts they have ever had. I actually forgot to take the crusts off the bread.. however everyone said that they was one of the best bits as the crusts remained crunchy, while the rest of it went soft. I do agree with Frenchie that although I used a shallow dish and had the dish right at the top of the grill, the sugar didn't caramalise! Luckily for me, we had a small blow torch type thing that is designed for making creme brule and that worked a treat! Without that though, I don't think the dish would have been very impressive..
