Great for brunch or a light lunch, kids love it

  • 500g. Sweet corn (tinned is fine)
  • 1red onion
  • 2 eggs
  • 20g coriander / parsley
  • 120g self raising flour
  • 2tsp smoked paprika
  • Salt and pepper
  • Sunflower oil for frying


    1. Place 300g of sweet corn, the roughly chopped onion, eggs, herbs, flour, paprika and seasoning into a food processor and blitz until combined. Transfer to a bowl and stir in remaining sweet corn
    2. Place 1-2 tbs oil in frying pan over a medium heat. Place 2-3 tbsp of batter in pan in batches of 3 and fry for a minute each side or until golden
    3. Place fritters on a paper lined tray and keep warm while you make the rest
    4. Serve with soured cream and guacamole
