Gnocchi with two cheeses & bacon

A great and speedy alternative to pasta, but just as filling

Method

  1. Put a pan of salted water on to boil for the gnocchi. Meanwhile, slice the spring onions and blue cheese. Spoon the mascarpone into a large deep frying pan. Add the blue cheese and spring onions and leave to melt over a medium heat.
  2. Stir the mascarpone mixture. Tip the gnocchi into the boiling water and cook for about 3 minutes, until they rise to the surface.
  3. Add the spinach in large handfuls to the cheese mixture and stir until just wilted. Crumble in half the bacon. Skim the gnocchi from the pan with a draining spoon, stir into the cheese mixture, then crumble over the remaining bacon. Serve with salad and crusty bread.

    This is really easy and quick and tastes scrummy. My boyfriend thinks he has died and gone to heaven every time he eats it! I normally substitute the bacon for wafer thin smoked ham. It is rich though so don't eat too much!

    I cooked this for vegetarian and non vegatarian friends. I served half of it to the 2 veggies before I added the bacon and then added the bacon for the other 2 portions. Everyone enjoyed it and it was a very quick and easy recipe to do. I also added acouple of twists of black pepper. Nutmeg might be nice with it too.

    Ace recipe! This is partner Robs dish now after he had to get off his lazy @ss and make it when i was busy! He made it in ten and he now thinks hes Mr Ramsey! Well, we won't go that far as it's not his own recipe but i was very impressed. Made twice now with both the dolcelatte and briw, gorgeous both times, i prefer the brie but Rob prefers the bluey so whatever you fancy, goes down lovely with garlic chiabattas and salad! Will make over and over again!

    This is a lovely concept which can be easily adapted. I added mushrooms, and replaced the spring onions with onion and the fresh spinach with frozen as it was what I had in, and it still worked out great! Don't add any salt though, whatever you do! Very calorific, so not something for everyday, but will definitely make again!

    I've made this tonnes of times. It's so quick and easy and it always goes down a treat! I substitute the spinach with peas though, which i find works better and add the juice of lemon which really makes it more yummy!

    This was delicious. We just had it for dinner, using Brie rather than blue cheese as neither of us is that keen on it. First time trying gnocchi and we're completely sold. Just gorgeous. Be warned though, a little goes a long way. My boyfriend couldn't finish his serving as it is very rich and filling.

    I found the blue cheese completely overpowering and the boyfriend thought the same. Might try out the suggestion of using Brie instead next time but as it is wouldn't make again.

    This is a very simple, fast and delicious dish. The only think I changed was smoked bacon lardons insteady of streaky and added a few mushrooms that needed using up. Will definitely be doing this one again.

    Made this the first time tonight using brie, amazing flavour and so simple, next time will add some cherry tomatos or sun dried tomatos for that something extra to it and would use bacon lardons instead of the streaky bacon. This will be a regualar meal for us

    To prevent this dish being too rich and overpowering never use smoked bacon and blue cheese together....far too much salt in fact I never use bacon at all and find the result is fine.
