Spanish style chicken

Ingredients

  • 1 medium onion cut into 8 wedges
  • 1 red onion cut into 8 wedges
  • 500g new potatoes quartered length ways
  • 8 whole cloves garlic unpeeled
  • 8 medium tomatoes quartered
  • 75g chorizo
  • 8chicken thighs
  • 1/2 tsp sweet smoked paprika
  • 1/2 tsp dried oregano
  • 1 green pepper deseeded and cut into strips
  • Sea salt
  • Ground black pepper

Method

    1. Preheat oven to 180 fan. Put the onions, potatoes, garlic and tomatoes in a large roasting pan and season, spray light toss everything together and roast for 20 minutes
    2. While veg are roasting, skin chorizo and cut into thin slices. Put the chicken thighs on a board and carefully slash each one 2 or 3 times with a knife. Season with black pepper. Mix paprika and oregano together and set aside
    3. Take roasting tin out of oven, scatter the chorizo over veg and toss everything several times. Place chicken on top and sprinkle with paprika and oregano. Season with a little salt and return to oven for 20 minutes
    4. Take tin out of oven, baste with juices. Place peppers under chicken with rest of veg
    5. Turn oven up to 200 fan. Put tin back in for another 20 minutes until peppers are just soft and chicken is golden

I tried this today and it was gorgeous. I adapted slightly because I thought it might be dry. I added a tin of chopped tomatoes and lots of cherry tomatoes. I used sweet potato and new potatoes and towards the end of cooking added about a quarter of a pint of chicken stock. A huge hunk of crusty bread would have gone down well with it but seeing as we are trying to cut down and eat healthy this was actually very filling just as it was.

Family favourite! I have adjusted this recipe - I use less garlic and more paprika/oregano. Also when tasty tomatoes aren't readily available, I use 2 tins of good chopped tomatoes and a tube of tomato purée to ensure a rich flavoursome tomato base. I also try to keep potatoes on the top/round edge for most of cooking and brush with a little olive oil - this way they brown beautifully and taste divine with the paprika, oregano, salt and pepper sprinkled over them.

This is even better if you use zest of one orange over it before putting it in the oven. This is almost identical to a nigella recipe, just missing the orange (trust me if you thought this dish couldnt get better.. use an orange! haha) xx

I made this from the Hairy Bikers recipe and wow this really is one of the best Chicken dishes ever! I made mine with Chicken breast :)

A great dish this really easy and tastes great. I found that the initial cooking time of 20 minutes a little too short and the potatoes were slightly underdone the first time I tried this. So I would recommend adding 10 minutes to the first roasting time.
